Here is why I love this dough.. Its fast. Its easy. It turns out great. I love to make this pizza on nights when I really don't feel like cooking, because it just doesn't feel like I'm doing a huge production. The kids love to decorate their own mini-pizzas. I can eat as many veggies as I want and the hubs can eat as much pepperoni as he wants. Best part..EVERYONE is HAPPY!! and that makes me happy. Therefore I love the dough. One of my favorite places to eat in college was called European Connection. They specialized in crepes...I usually got what was called a half attack. Meaning the humongous crepe was but in half. One side filled and wrapped with entrée food the other half your choice dessert filling. I've always been a fan of enchiladas. As a kid my parents would take me and my family to a small authentic Mexican restaurant called La Casita. With dim lights, scents of stewing jalapeños, and cozy seating it didn't take much to fall in love with the food. Hands down this is my husbands favorite desserts. When we were first married a friend had brought this real berry sherbet to a party and we have been making it ever since. I did not grow up on anything outside of good ol' american food. I mean really, while my mom is an excellent cook and isn't pick much at all...she married a husband who is and who suffered from loooooooots of heart burn. So She didn't ever put onion, or peppers in much of her food. She raised kids to appreciate all food, and all veggies- so as we have gotten older all of us have not been afraid to go outside our "comfort food" type meals and eat ethnic, or spicy, or "funny looking..." I really love to dip things. Just makes food that much more fun to eat when flavors mingle. I also find I am inclined to eat way more fruits or vegetables when I have something to dip them in. Yes, they are probably no as lean and skinny friendly when dipped, but better to eat a lot of fruit with a little dip then none at all! This also goes for my kids.. carrots in ranch and apples in peanut butter they could eat all day long. This dip is great to put out with an assortment of fruits. . . .
