Dumplings are arguably the best part of chicken soup. When my mom makes them for my family there is never enough. We argue and fight about who has more dumpling...and we race to get seconds and finish of the rest of the dumplings in the pot. Now when my mom makes dumplings she does two batches of dumplings. Makes the soup, and does one batch of dumplings...serves up half the folks and with half the soup remaining add more dumplings. This isn't necessary but makes the soup go really . . .

This meal is a staple in our house. I LOVE it. I love how easy it is, how fresh it is, how I always seem to have the ingredients around so when I'm in a pinch or dumbfounded as to what to make for dinner I have this as a backup. The kids not only help eat it but love to help make them. It's full of tender chicken, a little bit of cream cheese, spices and a little more cheese. With a crunchy, crispy, salty crust. If I can remember, I like to put 2 good size chicken . . .

If your the type to roast your own chicken.. this is a soup for you. Made from an entire chicken cooked in a slow-cooker or crock pot, whatever you want to call it. They add in some veggies and stock, a little tortellini, and flavor with dried spices and sundried tomatoes. It really is pretty delicious. Loaded with all the healthy stuff. I like the 7 Cheese from Costco but this package is large, so just use half and freeze the rest. This is a filling meal by itself no salad or . . .
