    This is THE BEST Cilantro Lime Rice Recipe, and of course, its a copycat of our favorite Chipotle! It's so easy, tossed together in minutes and full of flavor. It's perfect side for so many dishes from tacos to simple grilled chicken. You'll love this combo.

    We are big fans of Chiptole, I've watched them make this rice so many times it's so easy to copy cat. You just need a handful of ingredeients and you have better than Chipotle Lime Rice.

    Ingredients For Lime Cilantro Rice Recipe

    You will have most ingredients in your pantry. Grab a few fresh ingredients from your grocery store and you are good to go.

    1. Cooked Rice- I prefer Basmati Rice. You can use your favorite, but if you can choose go for a long grain rice!
    2. Fresh Lime Juice
    3. Fresh Cilantro
    4. Salt- LOVE a flakey sea salt and it's flavor.

    How To Make Easy Cilantro Lime Rice

    We've tried a couple of different techniques. We've tried cooking the rice in broth, lime and cilantro OR cooking the rice (in water) and adding the lime, cilantro and other ingredients after. The later is our favorite!

    • Step 1: Cook your rice and add to a bowl.
    • Step 2: While the rice is warm transfer it to a large bowl.
    • Step 3: Add in oil, seasonings, lime juice and cilantro.
    • Step 4: Stir Together and serve warm.

    FAQ's

    How Do I Store Leftovers

    Store in an airtight container in your fridge for up to one week.

    Do I use the cilantro stems?

    Becuase you are chopping the cilantro ultra fine you can use the stems. I dont recommend using the thicker part of the stems below the leaves. Toss those.

    Is this recipe Gluten Free?

    Yes! Rice is gluten free!

    Ingredients

    • 1 cup rice Basmati or long grain
    • 1.5 cups water
    • 3 tablespoon cilantro chopped
    • 3 tablespoon vegetable oil
    • 1 lime juiced
    • 2 teaspoon flakey sea salt More or less if desires

    Instructions

    • In pressure cooker add water and rice. Cook on rice setting until done.
    • Remove rice into large bowl, add oil, lime juice, chopped cilantro, and salt. toss while hot until well combined. Serve immediately.

      What type of rice? Long grain or Basmati?

        yes! you can use long rice or your favorite white rice. Jasmine and Basmati have a flavor that some might not like paired with lime and cilantro. I Love it! So I say use any of your favorite!
