    Easy Cilantro Lime Rice Copycat

    This easy cilantro lime rice copycat is one of our whole family's very favorite sides to order when we eat out (cough cough Chipotle... and a few other places). We all go nuts over it- fighting over who has the last bite. So we had to start making this at home. We tried a few different versions, but this one is our go-to recipe! I like to use my instant pot for cooking the rice, but you can also do this over the stovetop.

    How To Make Easy Cilantro Lime Rice

    We've tried a couple of different techniques. We've tried cooking the rice in broth, lime and cilantro OR cooking the rice (in water) and adding the lime, cilantro and other ingredients after. The later is our favorite!

    Step 1. I cook my rice in my instant pot. I use a 1-to-1 ratio with water and rice. 2 cups of rice and waters feeds my family (of 6) just fine.

    Step 2. While the rice is hot transfer it to a large bowl. Add in oil, seasonings, lime juice and cilantro.

    Step 3: Toss well, and serve hot!

    And we love to throw this easy cilantro lime rice copycat on nachos, in a taco salad or in burritos!  There are so many uses for this simple but amazing dish!!

    The perfect balance of soft warm rice, citrusy tangy lime, fresh herbs and salty seasonings. Goes well as any side or add in for a delicious mexican dinner night.

    Ingredients

    • 2 cups rice
    • 2 cups water
    • 2 tablespoon cilantro chopped
    • ¼ cup vegetable oil
    • 2 limes juiced
    • 1 teaspoon sea salt add more if desired

    Instructions

    • In pressure cooker add water and rice. Cook on rice setting until done.
    • Remove rice into large bowl, add oil, lime juice, chopped cilantro, and salt. toss while hot until well combined. Serve immediately.

      What type of rice? Long grain or Basmati?

        yes! you can use long rice or your favorite white rice. Jasmine and Basmati have a flavor that some might not like paired with lime and cilantro. I Love it! So I say use any of your favorite!
