While in Costa Rica we walked to a small restaurant around the corner from our condo and were caught in a down pour! It was one of our first nights there and we were loving trying the new foods and flavors. I ordered a lemonade that sounded amazing. They called it crazy lemonade- underneath it read; mint, ginger, limes. What they brought me was an icey, minty limeade. It was bursting with flavor and I found myself not being able to wait for the next sip. So, of course, we’re making our own- only changing the name slightly because clearly it’s crazy limeade.
That night we had rice and beans, sea food, fancy drinks and lots and lots of laughter. We walked home in pour rain. Half way through it stopped raining and we went into the warm waters of the ocean and swam until it was pitch black. There was hardly a moon and definitely hardly any street lights.
This is a photo of our drinks that night and the crazy limeade. The boys all throughout the trip chose to get these fresh cold coconut water drinks.
How to make crazy limeade
It’s so fast and simple! This limeade only requires a few ingredients- but it is the combination of the ingredients that makes it incredible!
- limeade concentrate
- fresh ginger
Place the limeade concentrate, 1/2 cup fresh mint leaves, 1 inch of fresh ginger and a ton of ice into a blender.
Blend until its a slushy type consistency!
I love to serve it in my fancy glasses with extra mint and lime wedges for garnish!
This drink is such a crowd pleaser. The whole family loves it! I recently served it for a few friends we invited over and everyone loved it!
