Ingredients

- Brie: Brie is a mild cheese with a creamy texture that’s best enjoyed warm or at room temperature. It is often located near other refrigerated specialty cheeses in most grocery stores and comes in a round box or wrapped in paper.
- Apples: I recommend McIntosh, Cortland, or Granny Smith apples which become perfectly tender when cooked. If you purchase a lot of apples or pick a bunch at an apple orchard, you can use some for a delicious homemade apple pie next.
- Golden Raisins: These are a bit plumper, juicier, and milder in taste than regular raisins. You can usually find them with other dried fruits in most grocery stores. They may also be labeled as “sultana raisins.”
- Apple Cider: Adds a sweet-tart flavor to the apples and raisins as they simmer and helps soften them.
- Pecans: Chopped pecans add a nice crunch to the brie, but feel free to swap them for another nut or leave them off if preferred.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Apple and Bacon Baked Brie: Instead of the apple-raisin mixture, try topping your brie with these cinnamon apples with bacon for a sweet and salty combo.
- Strawberry and Jalapeno: Change things up with a sweet and spicy topping like this strawberry salsa with jalapeno.
- Savory Herb: Add a sprig of fresh rosemary, thyme, or oregano directly onto the brie (before the topping) to infuse the flavor of the herbs into the cheese as it bakes. You can also add the herbs after the topping for a less pronounced herby flavor.
How to Make Baked Brie
To make the best baked brie recipe, start by preheating your oven to 350°F. Then, core and chop your apples.
- Step 1: Combine the apple-raisin mixture. Add the chopped apples and golden raisins to a saucepan.
- Step 2: Cook. Add the salt and apple cider. Bring to a gentle boil and cook until the apples are tender.

- Step 3: Add the toppings. Strain the apple-raisin mixture to remove excess liquid. Then, top the brie with the mixture, followed by the pecans.
- Step 4: Bake and serve. Remove the brie from the package and place it in a baking dish. Place the brie in the pre-heated oven and bake for 15-20 minutes. Serve and enjoy!
Expert Tips
- Check for doneness: Remove the brie from the oven and gently press the top. It should feel soft to the touch, but not collapse when pressed. Avoid overbaking to prevent the cheese from leaking through the rind.
- Use parchment paper: Line your baking dish with parchment paper before adding the brie to make removal and cleanup easier.
- Store leftovers in the fridge: Store leftover baked brie in an airtight container in the fridge for up to 3 days. Reheat in a 300-350°F oven for a few minutes until soft and melty or in the microwave in 15-second intervals.

Serving Suggestions

Recipe FAQs
You sure can! While the rind is necessary for holding the cheese together, it’s also completely edible. Plus, it adds to the brie’s signature flavor and texture.
You can prepare the apple-raisin topping and store it in the fridge, but I recommend baking the brie right before serving so it’s perfectly soft, warm, and gooey.

Notes
- The brie is done when the top is soft to the touch, rather than firm. Be careful not to overbake or it can collapse or ooze out of the rind.
- Don’t remove the rind before baking. It helps hold the brie together and is meant to be eaten.
