    Toasted baguette, smooth and creamy ricotta, and fresh berries tossed in a bright dressing.  Together these ingredients make an appetizer made in heaven!  This sweet and fruity twist on bruschetta is easy and delicious.  Let us show you how to make it!

    What is Berry & Ricotta Bruschetta?

    Berry and ricotta bruschetta is a twist on the classic bruschetta.  Rather than tomatoes and basil, we have topped our toasted baguette with creamy ricotta and fresh berries.  We have made a sweet and warm dressing and added mint for brightness.

    What Do I Need TO Make Berry & Ricotta Bruschetta?

    For this recipe you'll need:

    • 1 baguette, sliced
    • 2 tablespoon corn oil
    • juice of one large lemon
    • 2 tablespoon honey
    • ⅛ teaspoon cinnamon
    • 7-8 mint leaves, chiffonade
    • 1 cup raspberries
    • ¾ cup blueberries
    • 1 cup strawberries, sliced
    • ½ cup ricotta cheese

    How Do You Make Berry Bruschetta?

    Prep

    Start off by washing your berries.  You will also need to chiffonade some mint.  Let me show you how:

    1. This cutting technique is simple.  Layer your mint leaves on top of one another.

    2. Roll them into a tight roll.

    3. Slice into ¼ slices, which makes ribbons.

    4. Use as a topping for this delicious appetizer.

    How to Prepare The Berry Bruschetta

    1. Slice your baguette and place slices on a baking sheet.  Brush corn oil on the tops.  Broil for 1-2 minutes until golden brown.

    2. Prepare dressing by whisking together lemon juice, honey, and cinnamon.

    3. Toss berries with dressing.

    4. Add mint ribbons and toss.

    5. Spread about 1 tablespoon over each toasted baguette slice.

    6. Top with berry mixture.

    You can toast the bread about 30 minutes ahead, but I do not recommend assembling them until right before serving.
