Does it feel like summer is going by way to fast to anyone else? School is starting and vacations are ending. It’s even starting to get dark a little earlier. Well I’m not letting go! Not yet anyways. Today we have teamed up with Mazola Corn Oil to bring you a fresh summer treat and a GIVEAWAY! Someones is going to be lucky enough to receive a grilling package + Visa Gift Card! Scroll to the bottom of the post to see more on the giveaway. We have grilled up some bread and marinated some berries to bring you a seriously delicious appetizer. This Berry Bruschetta is my new favorite and will probably be making an appearance at many parties to come!
We are first going to start with the berries.. I used raspberries and blueberries. You can mix in just about whatever, but this combo was amazing. Add a little honey, lemon juice and cinnamon in a bowl. Toss in the berries and mint that has been ribboned or chiffonade. Cover and let that marinate in the fridge. I let mine sit for about an hour. You can do less or more, but I would lean towards more. The lemon and honey really sink into the berries and make every bite juicy.
Next we are going to use our Mazola Corn Oil. Corn oil is a great healthy alternative to butter when cooking and has a great flavor. In fact corn oil has been shown to help reduce LDL or bad cholesterol. Here is a study to read more about the health benefits of corn oil. We use corn oil all the time to pop our popcorn old fashion style and it’s perfection. I also brush oil on to my grill grates as well to stop meats and veggies from sticking. In this case we are going to brush a little on to each side off our bread then grill. For the bread I just a baguette. They are the perfect size for an appetizer. Gives your guest 2-3 bites to taste-test your treat. If they love they can get more, or just save room for the main course.
Place the baguette slices on the grill over medium-high heat and allow to toast. Watch carefully as bread can cook quickly. Toast up on each side then place on a pretty plate and allow to cool.
Once your bread is cooled, generously spread ricotta cheese over one side. Top with your berry mixture. I found it helpful to press the berries into the cheese a little. Helps keep them from rolling away. The left over berry marinade was so delicious I went ahead and drizzled that over top of the berries. So so much flavor! I can’t tell you how delicious this berry bruschetta is! Sweet and tangy over the smooth cheese with a nice crunchy toast. Really was amazing. I hope you enjoy! And now for the giveaway….

- 1 heaping C Raspberries
- 3/4 C Blueberries
- Juice from 1 Large Lemon about 2 1/2 T
- 1-2 T Honey
- 1/8 tsp Ground Cinnamon
- 7-8 Mint Leaves chiffonade
- 4 T Mazola Corn Oil
- Ricotta Cheese
- 1 Baguette
- Mix honey, Cinnamon and lemon juice together until combined.
- Toss with berries and mint ribbons.
- Cover and store in fridge to marinate about an hour. (Can use sooner but let it sit as long as you can)
- Cut baguette into slices at an angle.
- Brush each side with Mazola Corn Oil.
- Place on heated grill over medium- high heat for about 3-5 minutes on each side or until golden brown.
- Remove from grill and allow to cool.
- Spread with ricotta cheese and top with berries and mint. Drizzle extra juice over top.
- Serve promptly!
