    Ingredients to make a watermelon slushie on the table.
    • Watermelon: I used half of a mini watermelon for this watermelon slush because I find that the mini ones are sweeter than the larger ones. Feel free to use a regular watermelon if that’s what you’ve got on hand. You can even use pre-cut watermelon from the grocery store if you’d like. A mini watermelon typically weighs about 6-7 pounds, so you’ll need about 3-3.5 pounds of watermelon. 
    • Sugar: I used white granulated sugar, but you can use cane sugar, coconut sugar, honey, or agave if that’s what you have in your pantry.
    • Flavorings: Coconut syrup and freshly squeezed lime juice give this watermelon frozen drink a burst of flavor. If you’re buying the coconut syrup just for this recipe, you can also use it for our coconut lime spritzer next.

    Variations

    • Strawberry Watermelon: Add a cup of fresh or frozen strawberries for a berry twist.
    • Pineapple Coconut: Throw in a cup of fresh or frozen pineapple chunks for additional tropical flavor.
    • Minty: Instead of just garnishing with mint, blend in a handful of fresh mint leaves for even more of a cooling effect. 

    How to Make A Watermelon Slushie

    To get started making this watermelon slushie recipe, grab all of your ingredients and a high-powered blender.

    1. Step 1: Prepare the watermelon. Cut the watermelon into cubes.
    2. Step 2: Add ingredients to the blender. Add the cubed watermelon, ice cubes, coconut syrup, and lime juice to your blender.

    1. Step 3: Blend. Secure the lid and blend until the mixture has a slushy texture, about 30-40 seconds.
    2. Step 4: Garnish and serve. Pour the mixture into glasses, garnish with fresh mint, and serve.

    Expert Tips

    • Choose a ripe watermelon: Look for a firm watermelon with no dents or bruises and a creamy yellow field spot on the bottom. A ripe melon should feel heavy for its size and make a hollow sound when you knock on it.
    • Taste and adjust: The sweetness level of watermelon can vary, so you can always start with a little less sugar and add more if needed.
    • Storing: Because the ice will melt and cause separation, it’s best to enjoy this drink immediately after blending. While refrigeration is not recommended, you can make it and freeze the mixture in an airtight container for up to a month. When you’re ready to enjoy, allow it to sit out at room temperature for about 10-15 minutes, and then use a fork to break it up into a slushy texture.

    Recipe FAQs

    Why is my slushie watery?

    Overblending or an extra juicy watermelon may cause your slushie to be a bit watery. You can fix it by adding a handful of additional ice and pulsing until you’ve reached your desired consistency. 

    Why isn’t my ice blending?

    If your blender isn’t powerful enough, it may struggle to blend the ice cubes. You can try breaking them up before adding them. Place the ice cubes in a zip top bag and wrap with a kitchen towel. Then, roll over the bag with a rolling pin to break the ice into smaller pieces, or use a mallet and carefully strike the bag to crush the ice.

    Ingredients

    • 3 cups watermelon cubed (about half a mini watermelon)
    • 2 cups ice cubes
    • ⅓ cup white sugar
    • 4 tablespoons coconut syrup (like torani)
    • 1 lime juiced

    Instructions

    • Prepare ingredients by dicing your watermelon.
    • Combine all ingredients in a blender.
    • Blend for 30-40 seconds until ice is blended and resebles a slush texture.
    • Garnish with mint.
