    Watermelon Cucumber Salad

    The most refreshing, sweet, tangy, juicy and bursting with flavor summer salad. Using fresh ripe melons, fresh garden herbs and a little lime you can easily create this healthy watermelon cucumber salad! Plus I'm giving you some tips on how to pick the best melons!

    INGREDIENTS FOR WATERMELON CUCUMBER SALAD

    • MELON
    • LIMES
    • CILANTRO

    FAQ'S

    I DON'T LOVE ALL MELONS, CAN I LEAVE OUT WHAT I DON'T LIKE?

    Yes! if you are not a fan of honey dew or cantaloupe omit them!

    I'M ALLERGIC/DONT LIKE CILANTRO

    If you don't like cilantro or have an allergy you can sub it for mint, or just omit it.

    CUT YOUR MELON AND CUCUMBER

    Start by slicing up your melon. You can cut them in to cubes or slices as shown. For larger groups I recommend cutting them into chunks and placing in a large bowl.

    HOW TO PICK A FRESH ULTRA FLAVORFUL MELON

    To make sure you're picking the best cantaloupe and honey dew melon smell the spot where it was detached from the rind. If the little circle at the bottom of the melon smells strongly of the melon you know you have a good one. If you can't smell anything it probably isn't the sweetest melon.

    MAKE YOUR LIME DRESSING

    Squeeze your fresh lime juice into a bowl wash and chop your cilantro and add to the bowl with a pinch of salt. Salt will help enhance all the flavors.

    TOSS THE LIME DRESSING WITH THE MELONS AND CUCUMBERS

    Pour the lime dressing over the watermelon, melons and cucumbers. You can toss it all together and serve immediately!

    SERVE CHILLED

    I like this salad best served chilled. Chill your melons ahead of time so they ll be cold if serving immediately. If you are not serving immediately toss together and place in fridge.

    CAN I MAKE THIS AHEAD OF TIME?

    I recommend only tossing the ingredients together the day of serving. You can make the dressing and slice the melons a day before, store in fridge. Then toss together right before serving.

    Ingredients

    • 1 ripe cantaloupe
    • 1 ripe honeydew melon
    • ½ of a watermelon
    • 1 cucumber
    • ½ cup chopped cilantro (or one bunch)
    • 2-3 fresh limes juiced
    • pinch of salt

    Instructions

    • Chop up cantaloupe ,watermelon, honeydew and cucumber into bite size pieces or thin slices You can chop them however small or large as you want. Combine in large bowl.
    • In a small bowl combine cilantro, lime juice and salt. Stir and pour over. Toss to combine.
