Peach and Shrimp Kabobs

Dinner in 10 minutes?!  Yes please!  This tasty dish will be on your table before it is even set!  I love shrimp, and I love summertime grilling.  Add some juicy fresh peaches and you pretty much have heaven on a platter.

My love of seafood started when I was a kid.  I have really fond memories of camping with my family.  My dad would get up early to go fishing and he would catch our dinner.  We feasted on rainbow trout grilled over the camp fire during those trips.  Since then I haven’t been afraid to try other seafoods – well maybe clams…I’m afraid of clams.  But shrimp is honestly one of my favorite foods.  Its naturally fat free, and so delicious.  I also have nostalgia attached to eating stone fruits.  Juicy peaches, nectarines, plums…they were all favorites when I was a kid.  So together this meal brings a smile to my face.

Ingredients
  • 1 lb shrimp peeled and deveined
  • 2 peaches sectioned
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tsp soy sauce
  • juice of half a lemon
Instructions
  1. Thread shrimp and peach slices alternately on skewers.
  2. In a small bowl combine sriracha, honey, soy sauce, and lemon.
  3. Brush skewers with sauce.
  4. Grill over medium high heat 3 minutes each side.
