    This Sausage Tortellini Soup with spinach is rich, hearty, and packed with flavor. With savory Italian sausage, fresh veggies, and cheese tortellini in a creamy tomato-flavored broth, it’s a satisfying meal your family will request on repeat!

    Ingredients

    Ingredients to make sausage and tortellini soup on the table.
    • Cheese Tortellini: I recommend using frozen tortellini for the best results. If you use fresh or dry tortellini, you may need to adjust the amount of broth as well as the pasta cooking time. 
    • Ground Mild Italian Sausage: I used pork sausage, but feel free to use Italian chicken sausage if you’d like. If you buy a large quantity, you can use some to make our zuppa toscana soup too!
    • Fresh Vegetables: Onion, garlic, celery, carrots, and spinach flavor the soup while also bulking it up.
    • Chicken Broth: You can use store-bought or try our chicken bone broth for a homemade version. 
    • Tomato Paste: A little goes a long way for adding tomato flavor to the broth for this sausage tortellini spinach soup.
    • Seasonings: I kept it simple with Italian seasoning and a bay leaf. Just remember to remove the bay leaf before serving!
    • Heavy Cream: Stirred in at the end of cooking to add creaminess to the broth.
    • Parmesan Cheese: For topping each bowl for an additional layer of flavor and the perfect finishing touch.

    Variations

    • Gluten-Free: Use gluten-free tortellini like the Taste Republic brand or your favorite.
    • Vegetarian: Swap the chicken broth for vegetable broth and replace the pork sausage with a meatless version, such as Beyond or Impossible. You could also omit the sausage completely and use a combination of white beans and kidney beans like we did in this homemade Italian minestrone. 
    • Spicy: Choose spicy Italian sausage instead of mild and sprinkle in some crushed red pepper flakes to make this a spicy tortellini sausage soup.

    How to Make Tortellini Soup with Sausage

    To get started making this sausage tortellini spinach soup, chop the onion, garlic, celery, and carrots, and grab a large pot.

    1. Step 1:  Cook the sausage. Add the ground sausage to the pot and brown until almost cooked through.
    2. Step 2: Add the veggies and tomato paste. Stir in the onion, garlic, celery, carrots, and tomato paste. Cook until the vegetables have softened and the sausage is done.

    1. Step 3: Cook the soup. Pour in the broth and bring to a boil. Reduce the heat to a simmer and cook for 15 minutes. Then, add the tortellini and spinach, and cook until the tortellini is done and the spinach is wilted. 
    2. Step 4: Add the heavy cream. Turn off the heat and stir in the heavy cream. Ladle into bowls and garnish with Parmesan cheese. Enjoy your bowl of soup with slices of homemade French bread.

    Expert Tips

    • Wait to add the tortellini: Overcooking the tortellini can make it mushy, so be sure to add it at the end, along with the spinach. 
    • Finish with fresh Parmesan: Freshly grated or shredded Parmesan adds umami flavor, taking this sausage and tortellini soup to the next level. For the best flavor, avoid using pre-grated cheese.
    • Store leftovers in the fridge: Leftovers will keep for up to 5 days in an airtight container in the fridge. Reheat on the stovetop or in the microwave, adding a little more broth if needed.

    Do I need to drain the sausage when making sausage tortellini soup?

    No, the fat left behind from cooking the sausage adds flavor to the soup, so I don’t recommend draining it unless it’s overly greasy. 

    Can I make tortellini sausage soup ahead of time?

    Sure! If you plan on making the soup ahead of time, follow the directions as written through the simmering step. Store in the refrigerator until you’re ready to serve, then bring to a simmer and add the tortellini and spinach, and cook as directed. Stir in the heavy cream and serve topped with Parmesan cheese.

    Ingredients

    • 19 ounces frozen cheese tortellini
    • 2 pounds ground mild Italian Sausage
    • 1 small onion diced
    • 2 cloves garlic minced
    • 2 celery sticks diced
    • 1 cup carrots diced
    • 6 cups chicken broth Bone broth for extra protein
    • 3 tablespoons tomato paste
    • 1 teaspoon Italian seasoning
    • 1 bay leaf
    • 1 handful spinach
    • 1 cup heavy cream
    • Parmesan Cheese for topping

    Instructions

    • In a large stockpot, sauté sausage, when sausage is close to being cook through add in onion, celery, carrots, tomato paste and garlic. Cook until sausage is done and vegetables are softening.
    • Add in broth. Bring to a boil. Reduce heat and simmer for 15 minutes.
    • Gradually add tortellini and spinach. Cook according to directions (typically about 3-5 minutes).
    • When tortellini is done, turn off heat and stir in heavy cream.
    • Serve warm garnished with Parmesan cheese.

    Notes

    • There’s no need to drain the sausage after cooking, as the fat adds flavor and richness to the soup.
    • This recipe has only been tested using frozen tortellini. If you are using fresh or dry tortellini, keep in mind the cooking time will vary, and the amount of broth may need adjusting.
    • Store the soup in an airtight container in the refrigerator for up to 5 days and reheat on the stovetop or in the microwave.
