Growing up red enchiladas were always a favorite...that love has spilled over into my own little family as well. These are always a delicious, easy, comfort food that we enjoy. My mom always relied on the seasoning packet for these babies - 'cause lets face it - canned red sauce is...well...yucky. So I have a red enchilada sauce recipe that will knock your socks off. Items From Your Pantry I actually really like the good ol' seasoning packet as well, but making homemade is nearly as easy . . .
A while back I was on my way to a hair appointment. I knew I wouldn't be able to eat for several hours and my stomach was growling, so I swung thru a nearby Starbucks and got a breakfast item that they called a tomatillo steak and egg wrap. I was delicious! It was this item that inspired these enchiladas. La Tortilla Factory The base of this recipe are La Tortilla Factory non-GMO Gluten Free tortillas. They are made with cassava flour which makes them not only delicious but a perfect . . .
This Cranberry Almond Dressing is how my Mom does stuffing. Stuffing is my favorite side dish at a holiday meal. I love the savory flavors, and the moist yet firm texture. The ingredients that my mom includes in the dressing make it extra special and different than your run of the mill stove top stuffing. Semi Homemade This recipe uses boxed stuffing, so it is semi-homemade, but just as tasty as the real deal. The made from scratch stuffing recipe on this blog is AMAZING and . . .
Homemade creamed corn is the perfect Thanksgiving side. It's creamy comfort food at its best, and it is a side dish even the pickiest eaters will eat! I know because I've tested it out and found it to be true. I love this recipe, creamy corn with a crispy cheesy crust! what is not to love? Do you remember when you used to buy school lunch and they served us creamed corn!!!??? I ALWAYS gagged. I hated it. I was not a picky eater as a child, I even loved school lunches...however I did . . .
The first time i had a meal like this lemon herb chicken and rice was after having my 4th child. Kind friends surrounded my not-so-little-family with food, and cleaning, and babysitting. Feeding and helping us is not an easy task! But man, it helped sooo much. For me I needed it so SO much more than when I came home with my second baby. Kids needed to be at school, needed to be entertained, needed to be fed. Overwhelming to an emotional mama who can barely function. One night a meal looking . . .
Who doesn't LOVE Mac and Cheese? Mac and Cheese is the ULTIMATE comfort food. With the fall months approaching I love burning my fall scented candles and breaking out the comfort food recipes. There is something about fall that I adore...maybe the smells, maybe the clothes...I'm not sure, but it's my favorite time of year. Simple & Tasty About ten years ago I went on the hunt for the PERFECT macaroni and cheese. I didn't want to hassle with making a white sauce or buying fancy . . .
I love my simple dinner recipes. These Steak Fajita Tacos are on that list. Most nights out of the week I don't have time or patience to slave away in the kitchen to make an elaborate dinner. Which is the theme of this sheet pan meal week - keep it simple, keep it tasty, and keep it low maintenance. Dinner Made Easy This recipe takes me 30 minutes tops and 20 minutes of that time it's baking in the oven. Just because it's simple and quick doesn't mean it lacks taste. Fajitas are always my . . .
With Easter morning around the corner, I thought I would share our breakfast tradition of egg souffle. I've shared this recipe on the blog before, but wanted to pull it forward for the upcoming holiday. Holiday Traditions Growing up my mom would ALWAYS make this meal on Easter and Christmas morning. As an adult I've continued this tradition and always look forward to that little reminder of home on the holidays. Not only is this meal special and delicious - but all the work in done the . . .
This time of year I get all sorts of ideas for elaborate dinners, perfect presents, cookies baking in the oven, and a Pinterest-worthy decorated home. Let's get real for a second. No one can have all of those things and still sleep. For this reason I love meals like this rosemary chicken and potatoes. This entire meal is made in one pan! The meal turns out elegant and beautiful, while the prep time is around 10 minutes. When I make this Rosemary Chicken and Potatoes meal it is a huge hit! . . .
Enchiladas are like tacos, the best food of all time. You can gussy them up about a million different ways, and they're good every.single.time. I went with roasting a bunch of red bell peppers, poblano peppers, and onions, and that served as the base of the filling and sauce. Those tortillas there are homemade...I'm still perfecting the recipe, I've tried about 8 different variations so far, but I'm almost there. Believe you me, I will post that sucker when it's done. They're so . . .

Okay you guys. I have a love hate relationship with French Toast. I'm not a huge egg fan so often when I order french toast at restaurants I am disspointed when there is sooo much egg on them. I just can't eat it like that. This baked French toast recipe has lots of eggs in it, but doesn't have that "eggy" taste to it. It is so moist and flavorful, this recipe is one of my go-to's. It's easy to whip up at night, throw in the refrigerator. Let it sit overnight and all the flavors and juices . . .
