Tian? What on earth is a tian? WELL it is french. (that makes it much more attractive already right?) First, it is the dish/pan that the french used to cook and serve from and it is also the dish prepared in it. Usually its a vegetable type dish, there can be any form of squash, eggplants, onion and my version- a sweet potato tian. With such great vegetables, and a creamy custard, it filling and satisfying just as the entree itself.
Take your veggies and slice them all equally thin, except for the sweet potato, I like to slice that a little bit thinner to ensure that it cooks thoroughly.
Pour the custard over, and bake. It reminded me a lot of this Farmers Casserole recipe that is also on the blog. It would make a great healthy breakfast!
Sweet Potato Tian
Ingredients
- 1 zucchini
- 1 yellow squash
- 1 red onion
- 1 sweet potato
- 1-2 large tomatoes
- 2 garlic cloves
- 1 cup cream
- 3 eggs
- about 10 basil leaves
- ⅓ cup parmesan cheese
- 1 teaspoon salt
- pepper to taste
Instructions
- Slice vegetables and layer in a pattern.
- Chop garlic and basil.
- In a separate bowl, add eggs and lightly beat. Stir in remaining ingredients and pour over vegetables in the pan.
- Bake at 375 for about an hour, till vegetables are tender and custard is set.
