    Sweet Potato Tian

    Tian? What on earth is a tian? WELL it is french. (that makes it much more attractive already right?) First, it is the dish/pan that the french used to cook and serve from and it is also the dish prepared in it. Usually its a vegetable type dish, there can be any form of squash, eggplants, onion and my version- a sweet potato tian. With such great vegetables, and a creamy custard, it filling and satisfying just as the entree itself.

    Take your veggies and slice them all equally thin, except for the sweet potato, I like to slice that a little bit thinner to ensure that it cooks thoroughly.

    Pour the custard over, and bake. It reminded me a lot of this Farmers Casserole recipe that is also on the blog. It would make a great healthy breakfast!

    Ingredients

    • 1 zucchini
    • 1 yellow squash
    • 1 red onion
    • 1 sweet potato
    • 1-2 large tomatoes
    • 2 garlic cloves
    • 1 cup cream
    • 3 eggs
    • about 10 basil leaves
    • ⅓ cup parmesan cheese
    • 1 teaspoon salt
    • pepper to taste

    Instructions

    • Slice vegetables and layer in a pattern.
    • Chop garlic and basil.
    • In a separate bowl, add eggs and lightly beat. Stir in remaining ingredients and pour over vegetables in the pan.
    • Bake at 375 for about an hour, till vegetables are tender and custard is set.

      This sounds so delicious, I've never heard of a Tian before. What a great side dish!

      How many servings would this make? I'm thinking of doubling the recipe and dividing it between 2 square pans.
