Sweet Potato Tian

Deliciously baked veggies with a creamy custard filling. Perfect as an entree or side dish!

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 1 red onion
  • 1 sweet potato
  • 1-2 large tomatoes
  • 2 garlic cloves
  • 1 cup cream
  • 3 eggs
  • about 10 basil leaves
  • cup parmesan cheese
  • 1 teaspoon salt
  • pepper to taste

Instructions

  • Slice vegetables and layer in a pattern.
  • Chop garlic and basil.
  • In a separate bowl, add eggs and lightly beat. Stir in remaining ingredients and pour over vegetables in the pan.
  • Bake at 375 for about an hour, till vegetables are tender and custard is set.
