Sweet Potato Tian

- 1 zucchini
- 1 yellow squash
- 1 red onion
- 1 sweet potato
- 1-2 large tomatoes
- 2 garlic cloves
- 1 cup cream
- 3 eggs
- about 10 basil leaves
- ⅓ cup parmesan cheese
- 1 teaspoon salt
- pepper to taste
Slice vegetables and layer in a pattern.
Chop garlic and basil.
In a separate bowl, add eggs and lightly beat. Stir in remaining ingredients and pour over vegetables in the pan.
Bake at 375 for about an hour, till vegetables are tender and custard is set.
