    This time of year I get all sorts of ideas for elaborate dinners, perfect presents, cookies baking in the oven, and a Pinterest-worthy decorated home. Let's get real for a second. No one can have all of those things and still sleep. For this reason I love meals like this rosemary chicken and potatoes. This entire meal is made in one pan! The meal turns out elegant and beautiful, while the prep time is around 10 minutes.

    When I make this Rosemary Chicken and Potatoes meal it is a huge hit! My husband loves it and so do my kids. Be warned - when you make this meal - your home will be filled with the aroma of rosemary and chicken and your mouth will water until it is done cooking.

    I like to pair the rosemary chicken and potatoes with some simple roasted asparagus. I also like to pair savory spices like rosemary with a glass of ice cold milk. Growing up we always drank milk with dinner and I still enjoy doing so today.     My kids love milk too. I always smile when they order milk at a restaurant rather than a sugary drink. The calcium and vitamin D are so good for their little bones and I definitely do not feel guilty about what they are putting into their growing bodies when they drink a glass of milk. For a fancy holiday dinner, it doesn't get more simple than this one pan rosemary chicken paired with a fancy glass of milk.  Your family will love it, and you'll love it knowing you're serving your family a healthy and delicious meal.

    Rosemary Chicken and Potatoes

    Ingredients

    • 2 teaspoon Paprika
    • 1 ¼ teaspoon crushed Rosemary leaves
    • 2 cloves minced garlic
    • ¼ teaspoon black pepper
    • 1 teaspoon salt
    • 2 Tbs. Olive Oil
    • 4 chicken breasts
    • 1 ½ lb. red potatoes--cubed

    Instructions

    • Mix oil and first 5 ingredients in a large bowl.
    • Add chicken and potatoes; toss and coat well in oil/spice mixture.
    • Arrange potatoes and chicken in a single layer on a foil-lined and greased 9x13 pan.
    • Roast in oven at 425 for 40-45 minutes or until chicken is cooked and potatoes are tender, turning potatoes occasionally.
