    About The Ingredients

    All of the ingredients in these air fryer roasted potatoes can be purchased at your local grocery store. Here are a few items to note:

    Baby red potatoes, olive oil, herbs and garlic on a marble counter.
    • Baby red potatoes - I love using red potatoes in this recipe because of the subtle sweetness they offer. But you can use Yukon gold as well. Just make sure they are small potatoes. Alternately you could use full sized potatoes and cut them into 1 inch cubes.
    • Olive oil - I am using olive oil as the fat in the recipe because I really love the flavor. I prefer to use extra virgin. It pairs perfectly with the garlic.
    • Garlic - fresh always! It really makes a difference to use fresh garlic in this recipe. When buying garlic, choose a bulb without sprouts growing from it. It should also be firm.
    • Herbs and seasoning - we are using fresh parsley and Italian seasoning in this recipe, but feel free to swap them out for your favorite herbs. We also top it off with a little sea salt.
    • Parmesan cheese - fresh grated parmesan cheese really gives this dish a nice salty bite!

    How To Make Roasted Potatoes In The Air Fryer

    This air fryer red potatoes recipe comes together fast! Let me show you just how to do it!

    How to make roasted potatoes in the air fryer.
    1. Par-boil your baby potatoes in a 5qt stock pot of boiling water for 3 minutes. Drain. Set aside.

    Pro Tip: Par Boiling is the partial or semi boiling of food. This speeds up the air frying time. It also results in a nice crispy potato.

    1. In a large bowl combine olive oil, parmesan, garlic, salt, Italian seasoning, and parsley. Stir to combine.
    2. Add in potatoes and toss to coat.
    3. Transfer to the tray or air fryer basket. Preheat the air fryer to 400 degrees and cook potatoes for 10 minutes. Flip potatoes and return to air fryer for an additional 15 minutes. Serve immediately.

    Variations

    Swap out the seasoning for garlic powder, onion powder, fresh rosemary, freshly ground black pepper, or paprika.

    How To Serve

    This side is so versatile and is the perfect addition to any main dish. Here are a few ideas for serving:

    A ¾ view of roasted potatoes in the air fryer. They are garnished with parsley.
    • Serve alongside a brined turkey for the holidays.
    • Try alongside pressure cooker chicken during the week.
    • These are perfect with chicken cordon bleu. Dip them in our homemade sauce! Heaven!

    Pro Kitchen Tips

    • Par-boil your potatoes before air frying. These will cut down the cook time and will also increase the crispiness!
    • Don't overcrowd your air fryer - for the most even cooking, don't pack them into the air fryer. For this reason I don't recommend doubling this recipe.
    • Use a garlic press to mince your garlic. It is so much faster and easier than mincing by hand.

    Do I need to par-boil my potatoes?

    While I think it yields a better result, you do not have to. You can simply air fry your potatoes until they are fork tender - just increase the cooking time by about 5 minutes.

    How long do air fryer red potatoes last?

    These will keep in an airtight container in the fridge for up to 5 days. Reheat in the microwave. I do not recommend freezing.

    Are air fryer potatoes healthy?

    This recipe is very healthy. It is full of healthy fats, fresh herbs, and nourishing carbohydrates. Potatoes are one of the most satiating foods, and will keep you full longer than other carbs.

    • 1 tablespoon salt
    • 1 teaspoon Italian seasoning
    • ¼ cup fresh parsley

    Instructions

    • Par-boil potatoes in 4 quarts of boiling water for 3 minutes. Drain.
    • In a large bowl combine olive oil, parmesan, garlic, salt, Italian seasoning, and parsley. Stir to combine.
    • Toss potatoes in olive oil mixture to coat.
    • Transfer to an air fryer basket that has been sprayed with non-stick spray.
