- Baby red potatoes - I love using red potatoes in this recipe because of the subtle sweetness they offer. But you can use Yukon gold as well. Just make sure they are small potatoes. Alternately you could use full sized potatoes and cut them into 1 inch cubes.
- Olive oil - I am using olive oil as the fat in the recipe because I really love the flavor. I prefer to use extra virgin. It pairs perfectly with the garlic.
- Garlic - fresh always! It really makes a difference to use fresh garlic in this recipe. When buying garlic, choose a bulb without sprouts growing from it. It should also be firm.
- Herbs and seasoning - we are using fresh parsley and Italian seasoning in this recipe, but feel free to swap them out for your favorite herbs. We also top it off with a little sea salt.
- Parmesan cheese - fresh grated parmesan cheese really gives this dish a nice salty bite!

- Par-boil your baby potatoes in a 5qt stock pot of boiling water for 3 minutes. Drain. Set aside.
Pro Tip: Par Boiling is the partial or semi boiling of food. This speeds up the air frying time. It also results in a nice crispy potato.
- In a large bowl combine olive oil, parmesan, garlic, salt, Italian seasoning, and parsley. Stir to combine.
- Add in potatoes and toss to coat.
- Transfer to the tray or air fryer basket. Preheat the air fryer to 400 degrees and cook potatoes for 10 minutes. Flip potatoes and return to air fryer for an additional 15 minutes. Serve immediately.

Swap out the seasoning for garlic powder, onion powder, fresh rosemary, freshly ground black pepper, or paprika.

- Use a garlic press to mince your garlic. It is so much faster and easier than mincing by hand.
FAQS
While I think it yields a better result, you do not have to. You can simply air fry your potatoes until they are fork tender - just increase the cooking time by about 5 minutes.
These will keep in an airtight container in the fridge for up to 5 days. Reheat in the microwave. I do not recommend freezing.

- 3 LB small red potatoes
- ½ cup olive oil
- 1 cup fresh grated parmesan cheese
- 6 cloves garlic minced
- 1 tablespoon salt
- 1 teaspoon Italian seasoning
- ¼ cup fresh parsley
Instructions
- Par-boil potatoes in 4 quarts of boiling water for 3 minutes. Drain.
- In a large bowl combine olive oil, parmesan, garlic, salt, Italian seasoning, and parsley. Stir to combine.
- Toss potatoes in olive oil mixture to coat.
- Transfer to an air fryer basket that has been sprayed with non-stick spray.
