    Mexican Potatoes (air fryer instructions included)

    Potatoes are a magical food. I'm convinced. They have the ability to be cooked in almost any form and be DELICIOUS. Sometimes rice just doesn't cut it and you need, you crave something more satisfying with your tacos. Mexican Potatoes are it! Seasoned, crispy, hot and fluffy. You seriously cannot go wrong. Make them in the air fryer for an extra crispy shell!!

    WHAT ARE MEXICAN POTATOES?

    Mexican potatoes are potatoes cut into large fry/sections and baked or air fried with seasonings from mexico or with a Mexican flare. Like chili powder, cumin, garlic and oregano. They have a nice crispy salty shell and fluffy inside.

    WHAT EQUIPMENT DO I NEED TO MAKE MEXICAN POTATOES?

    You can bake your potatoes in an oven or a convection oven, but if you have an air fryer this is the preferred method as it makes them super crispy!

    WHAT INGREDIENTS DO I NEED FOR MEXICAN POTATOES

    • small potatoes
    • olive oil
    • garlic and sea salt
    • paprika
    • cumin
    • chili powder
    • onion powder
    • dried oregano

    WHAT KIND OF POTATOES DO I USE

    Mexican potatoes are typically made from a small potato and have more of a moon shape than a french fry shape. I use small red potatoes but you can really use any small potato.

    HOW DO I PREPARE  MY POTATOES

    1. Wash your potatoes
    2. cut your potato down the center, then cut that half in half again so you have a moon shaped section.
    3. If you feel your section is still too thick or large you may slice it in half again

    DO I NEED TO PEEL MY POTATOES?

    Most small  potatoes have a thin skin that only adds some delicious extra texture and crispiness. But if you feel your potatoes skins are extra thick and chewy you can peel them before seasoning.

    TOSS YOUR POTATOES IN SEASONINGS

    In a large bowl add your potatoes, seasoning and olive oil. Toss them until they are coated really well.

    COOK YOUR POTATOES

    Now that your potatoes are seasoned and ready to go its time to cook them! Here are some tips on cooking them in the oven and air fryer:

    AIR FRYING MEXICAN POTATOES

    • In your basket or air fryer drawer place your potatoes in and let cook for about 7-10 minutes.
    • Shake the basket half way through to turn the potatoes and make sure all sides are crisping up and cooking evenly.
    • Remember all air fryers cook quite differently. Some may need and extra 5-10 minutes to get nice and crispy. (these tend to be the multifunction air fryers)

    COOKING IN THE OVEN

    1. Line your baking sheet with parchment paper. Potatoes have a lot of startch and can stick to the pan an/or foil when baking (even though you have olive oil they can still be pretty sticky) Parchment paper has been the best.
    2. half way through baking shake or toss the pan to flip the potatoes on a different side to make sure they are crisping up evenly.

    HOW DO I SERVE MEXICAN POTATOES?

    Mexican potatoes make a great side with ANY dish. Tacos, burritos, grilled meats and fresh veggies. You can also make nachos out of them- topping them with layers of cheese, beans, creams. drooling.

    WHAT CAN I SERVE AS DIPPING SAUCE WITH MEXICAN POTATOES

    • Sour cream or crema
    • Ranch
    • Zesty Ranch (look for it in the BBQ isle its good!)
    • Queso
    • even ketchup is great

    Ingredients

    • 3 lbs potatoes about 16 small potatoes
    • ¼ cup Olive oil
    • ½ Tbs Smoked Paprika
    • 1 Tbs Sea Salt
    • ½ teaspoon cumin
    • ½ teaspoon chili powder
    • ½ teaspoon onion powder
    • ½ teaspoon garlic salt
    • ½ teaspoon oregano

    Instructions

    • Cut potatoes into 4 wedges.place in a large bowl and drizzle olive oil over.
    • Sprinkle seasonings over and toss until coated
    • On a parchment lined jelly roll pan arrange potatoes in a single layer.
    • Bake at 425 until fork tender, about 20-30 minutes. I like to flip half way.
    • Top with cheese and serve with sour cream.
