    • Chicken Bone Broth: Bone broth is more nutrient rich than regular chicken broth. If possible, make your own Chicken Bone Broth. If you MUST use store bought - buy a high quality chicken bone broth.
    • Olive oil: For cooking the onions and garlic at the start to give the stew a richer, more complex flavor.
    • Vegetables and Aromatics: We're sticking with the basics here. You need onion, garlic, celery, and carrot.
    • Red potatoes: Red potatoes are perfect because they tend to stay more firm in the soup rather than falling apart in the soup.
    • Cauliflower rice: Gives the texture of rice without adding any additional carbohydrates.
    • Rotisserie chicken meat: A simple option for pre-cooked chicken to make this soup recipe easier.
    • Lemon: Adding lemon zest and lemon juice adds a burst of brightness to your soup. Whatever you do -- don't skip it and use fresh whenever possible!
    • Herbs: A simple blend of dried parsley, thyme, and oregano add a bit more favor to the stew.
    • Spices: Turmeric adds color and antioxidants.
    • Chicken bouillon: For a boost of chicken flavor.

    How to Make Chicken Stew in Instant Pot

    1. Cook the onions and garlic in olive oil using the saute setting of your Instant pot until softened and fragrant.
    2. Add the celery, red potatoes, and carrots.

    1. Toss in the rotisserie chicken and pour in the chicken bone broth.
    2. Add the frozen cauliflower rice.

    2. Set the Instant Pot to pressure cook for 3 minutes.

    How to Store Chicken Stew

    • Refrigerator: Store leftover stew in an airtight container in your fridge.  It will keep for about 7 days.  
    • Freezer: You can also freeze chicken stew in an airtight container for up to 3 months.
    • Reheat: Return the chicken stew to a pot and heat on the stove over medium heat. Add more bone broth as needed to thin out the soup as it may thicken when stored.

    What to Serve with Chicken Stew

    In many ways this stew is a full meal in a bowl. It's great to reheat so serve it for dinner and then use the leftovers for quick lunches later in the week.

    Do I have to use rotisserie chicken?

    No.  You can use any cooked chicken.  You'll need about 2 breasts worth of meat. So if you'd rather grill or bake your chicken, feel free to do that.  I like rotisserie chicken because it is really tender and flavorful.  And if I'm making my own bone broth - I can use the carcass to do that.

    Can I make chicken stew on the stove?

    Absolutely.  You can make this is a large stock pot and simmer until your veggies are tender - about 20 minutes.

    Is chicken stew good for you?

    While some stews are high calorie and contain an almost gravy-like liquid, this healthy golden stew is full of good-for-you ingredients.  The base of this recipe is bone broth that contains healthy collagen and amino acids.  It's also filled fresh veggies and herbs for a healthy immune system.  So yes!  This healthy chicken stew is good for you.

    Ingredients

    • 1 tablespoon olive oil
    • 1 onion diced
    • 2 cloves garlic minced
    • 5 ribs celery diced
    • 5 carrots sliced
    • 2 red potatoes diced
    • 2 breasts rotisserie chicken shredded
    • 8.5 ounces frozen cauliflower rice
    • 32 ounces chicken bone broth
    • zest of one lemon
    • juice of one lemon
    • 1 tablespoon dried parsley
    • ½ tablespoon dried oregano
    • 1 teaspoon thyme
    • 1 tablespoon tumeric
    • 1 teaspoon chicken bouillon granules
    • salt and pepper to taste

    Instructions

    • Set your pressure cooker to saute.  Add olive oil, onions, and garlic.  Cook until softened and fragrant.
    • Add celery, red potatoes, carrots, rotisserie chicken meat, and frozen cauliflower rice. Pour in chicken bone broth and add lemon zest and lemon juice.
    • Toss in seasoning: parsley, thyme, oregano, salt, pepper, turmeric, and chicken bouillon.  Stir until well combined.
    • Pressure cook for 3 minutes.  Use a quick release to release the pressure.  Serve immediately.

        Its the zest of one lemon. Usually around a tsp.
