Fruit leather is amazing, especially homemade fruit leather. I have loved it since I was a kid, and my kids love it now. The really tasty store bought fruit leather has a ton of sugar in it, and the organic sugar free fruit leather is kinda bland- at least compared to homemade fresh from the dehydrator/oven fruit leather.
It's so easy to blend up in a blender, smooth out, bake, eat.
You want to smooth it out so it is nice even. you don't want it to be too thick or it will take too long to bake, and you wont want it to be to thin or it will dry out. I did put a little bit of sugar or honey in mine. Especially if its when your strawberries are not in season and not at their sweetest ripest point you may want to add it. When it is done cooking and no longer sticky cut the roll up into strips and line with parchment paper or wax paper. Place in air tight container and it will store for a while at room temperature.

Strawberry Lemonade Fruit Leather
Ingredients
- 1 pint strawberries
- 1 large lemon
- ¼ cup sugar or honey
- parchment paper/silpat
Instructions
- Cut and wash strawberrries. Zest whole lemon, and then juice it. Add sugar and blend till smooth. If desired you can strain out seeds.(I leave mine as is)
- Line dehydrator sheets or sheet cake pan with parchment paper, silpat or dehydrator plastic sheet. If using a dehydrator follow user manual instructions for fruit leather for your specific machine. If drying in oven, bake at lowest setting or 170 with oven door propped open until fruit leather is no longer sticky.
- When finished cut and roll-up in parchment paper or wax paper.
