    Meatball Italian Bowl

    Bowls are the new plates.  This Meatball Italian Bowl will be your new lunch go-to.  Savory marinara, heart meatballs, fresh broccoli, and simple pasta come together in a buddha-style bowl that is healthy and delicious.

    What Is A Meatball Italian Bowl?

    This Italian bowl is a nod to the buddha-bowl style lunches.  Here was are combining a starch (pasta) with a protein and veggies.  Instead of serving this family style like most Italian meals, we are dishing it up all together in a bowl.  It's beautiful and delicious.

    What Should I Add To My Grocery List?

    • penne pasta
    • jarred marinara
    • frozen meatballs (or ingredients for homemade)
    • broccoli
    • parmesan cheese

    How Do I Make This Meatball Italian Bowl?

    I've really loved eating meatballs for lunch for a long time.  An old favorite was spaghetti squash with meatballs.  Des has the best recipe for homemade meatballs, but , you can use store-bought meatballs to throw this recipe together. recipes!  I recommend Rosina Meatballs when you are going for store bought.  They have an authentic flavor and are simple to heat.

    1. Roast your broccoli by cleaning, chopping, and tossing in olive oil. Sprinkle with a little salt and pepper. Bake on a baking sheet at 375 for about 5-10 minutes until tender.
    2. Cook your pasta according to the package directions.
    3. Heat your meatballs.  If you are making homemade meatballs - see recipe notes for instructions.
    4. Add pasta to your bowl
    5. Place meatballs in your bowl.
    6. Add roasted broccoli to your bowl.
    7. Pour in marinara.
    8. Garnish with parmesan.  Serve immediate.

    Ingredients

    • ground beef or turkey
    • 2 slightly beats eggs
    • bread crumbs (GF for friends who cant have gluten)
    • parmesan cheese
    • sour cream (a must!)
    • dried oregano
    • salt
    • onion salt (can sub with diced onion)
    • fresh parsley* optional

    Directions

    1. in a large bowl place your meat.
    2. Add 2 slightly beaten eggs
    3. Bread crumbs
    4. Parm cheese
    5. sour cream (this is a must! it keeps those meatballs super moist!)
    6. Oregano
    7. salt
    8. Gently mix together

    *I also love to add a small handful of fresh parsley if you have that on hand.

    Ingredients

    • 1 cup cooked penne pasta
    • 12 ounces prepared meatballs either frozen or use recipe in notes
    • 1 head broccoli
    • 24 ounces store-bought marinara sauce
    • parmesan cheese

    Instructions

    • Divide all ingredients equally between 4 bowls.
