I grew up with a family that loved to hunt and fish and camp. I have really fond memories of fishing with my dad and then cooking up our catch for dinner. Some have an aversion to sea food, but I kind of adore it – especially salmon. It is packed with healthy omegas and leaves you satisfied without feeling like you ate a brick.
Salmon with a Kick
I’ve been making this recipe every since I was a newlywed. It’s fast and tasty, which is kind of my motto. The combination of the flaky salmon, and the seasoned, flavorful crust are a perfect harmony in my mouth. I took this recipe a step further recently and cooked the entire meal on the same sheet pan. I loved the easy clean up and that dinner was done in one cooking step. We are posting all week ideas for dinner that you can whip up on your sheet pan. Did you see Desi’s Sausage + Veggie meal? For the crust, start with some fresh herbs. If you don’t have any handy – dried will work, but cut the amount in half. I like to use dill, rosemary, thyme, and dried sage. Combine herbs with about 1/2 cup of seasoned bread crumbs and top your salmon fillets. Spray the tops with a little non stick spray and add your potatoes and asparagus to the pan.
You’ll end up with a perfectly-cooked salmon filet with a kick of flavor in the crust, perfect sliced potatoes, and tender asparagus in about 25 minutes.
Not Yo Momma’s Sheet Pan
These crow canyon home sheet pans have been my favorite thing lately. There is something about using beautiful kitchen items that makes me happy. Almost as happy as a meal that requires only one pan to wash when it is all said and done.

- 3-4 salmon fillets
- salt and pepper
- 3/4 cup seasoned bread crumbs GF crumbs for GF
- 1 tbsp fresh thyme chopped
- 1 tbsp fresh dill chopped
- 1 tbsp fresh rosemary chopped
- 1/2 tbsp ground sage
- cooking spray
- 1 bunch asparagus trimmed
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 cup grape tomatoes sliced in half
- 10-12 small red potatoes sliced thin
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 cup mayo
- 2 cloves garlic minced
- juice from half of a lemon
- salt and pepper to taste
- In a small bowl combine bread crumbs and herbs.
- On a greased foil-lined baking sheet, place salmon fillets. Season with salt and pepper.
- Top with bread crumb mixture.
- Spray the top of the fillets with cooking spray so they will brown up in the oven.
- Toss asparagus with olive oil and add to the pan. Season with salt and add tomatoes.
- Toss potatoes with olive oil and add to pan. Season with salt and pepper
- Bake at 350 degrees until fish is opaque and flaky - about 25 to 30 minutes.
- While meal cooks, prepare aioli. In a small bowl combine all ingredients and whisk until smooth. Serve with salmon meal. Tastes great on salmon or potatoes.
