It is officially, unofficially summer! The other day I whipped up a pot of summer corn chowder and thought I would share with you all this delicious way to toss in lots of summer produce. Corn on the cob is one of my favorite summer foods - but serving plates of boiled corn gets a little bit boring during the warm months. I have a few ideas up my sleeve for savoring this delicious summer food, like this corn chowder and my sweet corn salad. Chowder For Beginners I know it is easy to be . . .

I'm calling it this " weight loss soup " because it's FINALLY what helped me to take off my baby weight. Normally after having a child I bounce right back, run a million miles an hour and loose any extra pounds I had. Well, not with this 4th child. I was very sick, had a lot of health problems with this 4th baby and gained more weight than normal. I also didn't bounce back to my normal energetic self. Nothing was typical with this pregnancy or postpartum to say the least. It was a real struggle . . .
Peach soup- who would have thought? The sweet simplicity of this appetizer adds a nice charm to your dinner. Peaches are such a mild delicious fruit most people enjoy them, making it just the right pre-course to your dinner. I say pre-course because wouldn't serve this as a main dish, as it very light. That it also what makes it so refreshing. This recipe calls for canned peaches but if fresh peaches are in season, I highly recommend! Give them a little sauté with some sugar to soften and . . .
French Onion Soup. Its a serious love of mine. At first I kinda sorta hated the soggy bread and would eat around it. Scooping up the gooey cheesy and slurping the hot savory broth, but now the crusty garlic crouton is a necessity. Each part of this soup together equals harmony. For years I didn't ever make this soup, despite how much I love it. I'd be sure to get my cravings filled when a restaurant offered it on their menu. Sometimes Costco carries little individual vacuum sealed packets of . . .

Sometimes I do chicken, sausage, I throw whatever produce is going bad in there, vary the spices, it's really so forgiving! You can crock pot it all day or simmer it on the stove for about 30 . . .

Fall is officially here, so I've been breaking out my soup recipes for some cozy evening suppers. Albondigas Soup has been a favorite of mine for a long time. Whenever I see it on a menu at the Mexican restaurant I'm sure to order a cup. It is so comforting and hearty with a kick of flavor! Albondigas is the spanish word for meatball - so this soup is simply - Mexican Meatball Soup. The meatballs are paired with fresh vegetables in a simple broth. You start by making a flavorful . . .
We have entered softball season where we spend hours upon hours at the softball field...in the chili evening air. Often I'm scrambling for dinner. I can't seem to ever remember to throw something in the crock pot. Right across the street from the field is a grocery store. After dropping off my daughter for her warm ups the boys and I ran over to scout something out for dinner, because we were going to be at the field for the next 2.5 hours. One night ended up grabbing a creamy, nice and . . .
This is one of my favorite soups of all time. The thing is, is that is come from a restaurant in another state far away from me, and it has become so popular in that state, in that restaurant, that it's way over priced! I can't bring myself to even go there and buy it in its tiny bowl any more. So despite all the copy-cat recipes for Zupas Wisconsin Cauliflower Soup, I haven't made one and thought- YES! that is it, until I made my own adjustments. In all honestly maybe I have just forgotten . . .
