Peach Soup

Peach soup- who would have thought? The sweet simplicity of this appetizer adds a nice charm to your dinner. Peaches are such a mild delicious fruit most people enjoy them, making it just the right pre-course to your dinner. I say pre-course because wouldn’t serve this as a main dish, as it very light. That it also what makes it so refreshing.

Use Canned or Fresh

This recipe calls for canned peaches but if fresh peaches are in season, I highly recommend! Give them a little sauté with some sugar to soften and sweeten them up. Maybe add in a little apple juice to replace the canned juices. Either way add in the ingredients to the blender and puree! So easy.

Pour into a lovely bowl, (these Fiesta Dinnerware Bistro bowls are dreamy) and layer with yogurt, fresh fruit and mint leaves. This would make a delicious smoothie bowl. How ever you like it, give it a try! It’s nice to mix up routines and try something unique!

Ingredients
  • 1 {15oz} can Peach Slices
  • 2 C Peach Mango Nectar
  • 1/2 C Vanilla Yogurt
  • 1 tsp Lemon Juice
  • 1 tsp Cinnamon
  • Additional yogurt {optional garnish}
  • Fresh fruit such as raspberries {optional garnish}
  • Mint leaves {optional garnish}
Instructions
  1. Puree all ingredients in a blender.
  2. Chill for at least 1 hour. Serve well chilled and garnished with a dollop of yogurt, fresh fruit, and mint leaves.
  3. Then take a step back and admire your devastatingly hard work! You are good.
