The term "deviled", in reference to food, was a common term in the 1700's. It pertained to spicy or zesty foods. When eggs were prepared in the way we are talking about, a healthy amount of mustard and pepper was used. They became popular and got their name around 1786 here in the U.S. In parts of the Southern and Midwestern United States, the terms "stuffed eggs", "salad eggs", and "dressed eggs" are used instead.
Hard-boiled eggs are peeled and halved lengthwise, with the yolks then removed. The yolk is then mashed and mixed with other ingredients, like mayonnaise and mustard. - Slice your eggs in half length-wise and remove the yolks. Transfer the yolk to a bowl and add mayo, mustard, vinegar and salt and pepper. Mash well and stir until well combined.
- Transfer mixture to a piping bag.

The Guacamole - I love avocado and egg, which is why this version of the deviled egg is so delicious. When I first heard about this combo I turned my nose up, but once I tried it I was sold. Topped with a little pico de Gallo, this recipe will for sure be a winner at your next get together.
The Bacon Ranch - Bacon and ranch have been long time friends, so it is only logical that I combined these guys in a deviled egg recipe. The ranch gives just a little kick and the bacon gives that irreplaceable smokey flavor everyone loves.
The Jalapeño Popper - Jalapeno poppers are a favorite of mine, and I wanted to make one deviled egg recipe with a little heat - so I went with the delicious combo of cream cheese and jalapeño. I used canned jalapeños so I could use the juice from the can in the filling and the jalapeños as garnish.

You can make deviled eggs 2 days ahead. Just keep them in an airtight container in the fridge until serving time. While hard boiled eggs last about a week in the fridge, once you prepare them into deviled eggs, they only keep for a few days.
To center the yolk so that when the egg is halved, the egg does not look lopsided, place the egg on its side overnight. The yolks get repositioned because they're no longer sitting up, but rather lounging sideways. I'm not too particular about the yolks being centered, but this method works well if you want them to be perfect.
Two hours is the rule for these guys. After two hours, transfer them to the fridge.

- ¼ cup mayo
- 2 teaspoon juice from canned jalapeños
- 2 tablespoon diced canned jalapeños for garnish
Instructions
The Classic Deviled Egg
