Best Breakfast Burrito Recipe

There is one thing I love more than a good recipe – a practical “non-recipe” recipe for a simple, quick and delicious meal.  These breakfast burritos are just that!  There is no thinking involved, no recipe to follow to a T, and no fancy ingredients.  I’ve made these time and time again and I always get happy bellies.  My mom ALWAYS requests this meal when she visits…sometimes twice in one visit!  I love breakfast for dinner on occasion – so I whip up the best breakfast burrito recipe in the evening more often than in the morning!

Simple Ingredients

An open breakfast burrito with scrambled eggs and hot sauce


  1. Warm your tortillas.
  2. Add scrambled eggs.
  3. Top with cooked hash browns.
  4. Sprinkle with shredded cheese.
  5. Add salsa or hot sauce if desired.
  6. Roll into a burrito.

Serve Immediately or Freeze

We love to eat these burritos right away, but they also freeze like a dream.  Wrap them in plastic wrap and place in a freezer bag and they will keep in the freezer for a month.  Just remove them from the plastic, wrap in a damp paper towel, and microwave before serving.  They are a perfect quick breakfast.

  • 4 large flour tortillas warmed
  • 4 eggs scrambled
  • 1 cup hash browns cooked
  • 4 slices bacon cooked
  • 1/2 cup shredded Mexican blend cheese
  • Hot Sauce
  • Avocado
  • Sour Cream
  • Pico de Gallo
  1. In a large tortilla layer hash brown, eggs, crumbled bacon, and cheese.
