I hope you all enjoyed our grilling week last week! I know I learned a thing or two from our girls post…my steaks, burgers, and pizza’s are going to be better than ever. Today’s recipe had been planned as apart of that week, but the Grilled Asian Chicken I used in this salad really needed a post of it’s own. I shared some good tips on grilling chicken breast, hopefully help you have some more flavorful, less-dried out meat!

So this salad is kind of the bomb. I went to a modern Asian restaurant recently and I was a little confused by their menu as it had everything from buffalo chicken to ice smoothies, but it was fun and hip. I ordered a salad and it was amazing! There was no dressing, yet it had flavor after flavor after flavor. One of the most interesting salads I had eaten in a long time. I took a few notes on my phone to try and recreate it at home. This is what I came up with..
Start out with a great bed of greens. Then slice and dice all your ingredients. We are going to be using a little of everything.. mango, cucumbers, mint, basil, red onion.. all of these ingredients remind me of the taste of Hawaii and its tropical auro.
The restaurant plated my salad very similar to this. It’s a beautiful presentation for guest, but when serving to a hungry anxious crowd, just toss it all together. So slice or chunk up some mango. I used a spiralizer for my green apple, and sliced my cucumbers but any cutting technique works great. The carrots were pre-shredded to save on time. Wash all your herbs and chiffonade the mint and basil. Top all with some roasted peanuts for good crunchy measure.
Skip The Dressing
There really is no need for dressing on this salad! It’s delicious with none, another reason I love it. Adding in a variety of ingredients- especially the herbs, really gives enough flavor to leave you satisfied. I toss with a little Olive Oil or maybe a little Grape Seed Oil to keep it moist. This is a great healthy summer salad, leaves you feeling like you want to hit up the beach and enjoy the shade of a palm tree. Enjoy!

- Mixed Greens
- Grilled Asian Chicken Breast cut into strips
- 1 Mango sliced or diced
- 1 Green Apple diced
- 1 Cucumber
- 1 Avocado
- 1/2 C Shredded Carrots
- 1/4 a Red Onion thinly sliced
- 5-6 Large Basil Leaves
- 4-5 Large Mint Leaves
- Handful of Cilantro
- 1/3 C Peanuts lightly roasted and chopped
- EVOO or Grape Seed Oil
- Wash and cut as desired mango, cucumber, avocado, red onion, carrots and green apple.
- Wash and coarsely chop Cilantro.
- Wash and chiffonade mint and basil.
- Previously grill chicken, let cool and slice.
- Coarsely chop peanuts and toast over medium-high heat or until flagrant.
- Toss mixed greens with herbs and oil.
- Top with remaining ingredients, finishing last with chicken then peanuts. Enjoy!
