    This S’mores Bars recipe combines everything you love about the popular campfire classic into an easy-to-make dessert bar! Graham cracker-flavored cookie dough is layered with gooey marshmallow creme and melty milk chocolate bars and then baked to perfection for an irresistible sweet treat.

    Here’s a look at the ingredients you’ll need to make these easy s’mores bars.

    • Butter: Provides richness and moisture to the cookie bar dough.
    • Sugar: We used a combination of brown sugar and white granulated sugar to sweeten the cookie bars.
    • Egg: Helps bind the other ingredients in the dough together.
    • Flavor Enhancers: A bit of vanilla extract and salt help to enhance the other flavors in the cookie dough.
    • Flour: Provides structure to the graham cracker cookie dough.
    • Baking Powder: Leavener used to help the cookie bars rise as they bake.
    • Graham Cracker Crumbs: Added to the cookie dough to give it a graham cracker flavor. 
    • Marshmallow Creme: Mimics the melted marshmallows in traditional s’mores. For another delicious way to use marshmallow creme, try this Marshmallow Cream Cheese Fruit Dip next. 
    • Milk Chocolate Bars: For creating the chocolate layer in these s’mores bars. Feel free to use your favorite brand such as Hershey bars. You can also use dark chocolate bars if you prefer.

    Variations

    • Graham Cracker Crumbs: While we used traditional honey grahams, feel free to switch things up by using cinnamon grahams, chocolate grahams or even golden grahams cereal to make your graham cracker crumbs.
    • Add Peanut Butter: Spread a layer of peanut butter over the cookie dough before adding the marshmallow creme and chocolate to make peanut butter s’mores bars.
    • Gluten-Free: To make this recipe gluten-free, replace the all-purpose flour with a 1:1 gluten-free version and use gluten-free graham crackers for the crumbs.

    How to Make S’mores Bar

    Get started by preheating your oven to 350° F and spray an 8x8-inch baking pan with non-stick spray or line with parchment paper.

    1. Step 1: Cream butter and sugar.  Cream together the butter, brown sugar, and granulated sugar in a mixing bowl. 
    2. Step 2: Mix the wet ingredients. Add the egg and vanilla to the butter and sugar mixture and mix until combined.

    1. Step 3: Add the dry ingredients. Add the flour, baking powder, and salt and stir to combine.
    2. Step 4: Mix in the graham cracker crumbs. Add the graham cracker crumbs and mix to incorporate them into the dough.

    1. Step 5: Start layering the ingredients. Press half of the dough into the prepared baking pan and spread the marshmallow creme over top. Place the chocolate bar pieces on top of the marshmallow layer.  
    2. Step 6: Add more dough on top. Spread the remaining cookie dough evenly over top of the layers of dough, marshmallow creme and chocolate bars.

    Step 7: Bake the bars. Place the baking pan in the oven and bake for 25-30 minutes or until the top is set. Cool for 10 minutes before cutting into bars and serving.

    These cookie bars are great for any occasion. Here are some great ideas for serving a s'mores bar:

    • Make homemade graham cracker crumbs: While you can purchase the crumbs already ground up, if you can’t find them, it’s easy to make your own. Simply break up some graham crackers and grind them in a food processor. You can also place the graham crackers in a zip-top bag and use a rolling pin to crush them into crumbs..
    • Use parchment paper for easy clean up: Line your baking pan with parchment paper, leaving some hanging over on the sides. This way you can lift the entire batch out of the pan once it's cooled, which makes it easier to cut the bars.
    • Store at room temperature: Store the bars in an airtight container at room temperature for up to 3 days. Another option is freezing them individually or with parchment paper in between each bar for up to 3 months. Be sure to thaw frozen bars before serving.

    Recipe FAQs

    Can I use regular marshmallows instead of marshmallow creme?

    We don’t recommend using regular marshmallows as they won’t have the same consistency and texture when baked as the marshmallow creme. 

    Can I make a double batch?

    Yes, you can double the ingredients and use a 9x13-inch baking pan. Note that the bars will take a little bit longer to bake. Check for doneness around the 30-minute mark, and continue baking until the top is set.

    Decadent cookie bars made with everything you love about a S'more. These have a chewy cookie base, are filled with chocolate bars and marshmallow cream, and then topped with another layer of graham cracker flavored cookie dough. They are baked to perfections and so delicious.

    Ingredients

    • ½ cup butter
    • ¼ cup brown sugar
    • ½ cup granulated sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 cup flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup graham cracker crumbs
    • 7 oz marshmallow creme
    • 7.75 oz milk chocolate bars about 5 bars

    Instructions

    • Preheat oven to 350 degrees Fahrenheit.
    • In a large mixing bowl, cream together butter, brown sugar, and granulated sugar.
    • Add egg and vanilla, mix until combined.
    • Add in flour, baking powder, and salt. Mix.
    • Add in graham cracker crumbs and mix until incorporated.
    • Press half of the dough into an 8x8 baking pan that has been sprayed with non stick spray or lined with parchment.
    • Spread marshmallow creme on top of the dough layer. Cover the creme layer with chocolate bars. Break them apart and arrange to fit so they cover the top.
    • Top with remaining dough, pressing down and evenly spreading across the top to cover.
    • Bake at 350 degrees for 25-30 minutes until top is set. Let cool 10 minutes before serving. Can be served warm or at room temp.

      The recipe listed baking powder is one of the ingredients while the instructions mentioned baking soda. Which ingredient is correct for this recipe?
