    The BEST Chicken and Dumpling Soup

    DUMPLINGS!!! Is there anything better than delicious homemade dumplings? The beautiful thing about making dumplings is how freaking easy they are and they take your soup up a whole level of homemade. This recipe has been handed down from grandmas. i love how healthy, hearty and delicious it is. I know your whole family will sat this is the best chicken and dumping soup they've had!

    MAKING HOMEMADE CHICKEN AND DUMPLING SOUP

    First let's discuss how to make the chicken stock. For the ultimate chicken noodle soup you will want to obviously make homemade chicken stock. It sounds intimidating but really, it's SO EASY. There are two ways to do this- depending on how much time you have.

    1. Pressure cooker (check out the video!)
    2. Stove-top

    HOW TO MAKE CHICKEN STOCK:

    You will need :

    • onions
    • garlic
    • salt
    • celery (the middle and leaves are perfect to use for this!)
    • carrots
    • whole chicken
    • lots of water
    • herbs- thyme and oregano are my fav

    PRESSURE COOKER INSTRUCTIONS: if you decide to use your pressure cooker you can make the entire soup in it! Cook your chicken with onions, garlic, salt, carrots and celery until done (about an hour, let natural release). Strain out your broth and shred your chicken.

    STOVE-TOP INSTRUCTIONS: In a large stock pot place your chicken, veggies and spices into the pan. Fill pan to the top- or until it at least covers the chicken by 2 inches. Bring to a boil, and then let simmer for about 2 hours.

    TIP: When I cook my chicken on the stove top I am able to get twice the amount of chicken stock than the instant pot. So I prefer this method, but it does take longer.

    When your chicken is tender and cooked through remove it from water and shred. Strain and discard the vegetables from the stock. They'll be too mushy to be reused.

    CHICKEN SOUP HACKS

    ok ok, you don't want to do the whole chicken deal? Here are some short cuts

    1. use a really great quality bone broth or stock
    2. use rotisserie chicken meat
    3. cook thighs and breast in instant pot with some broth and add broth

    PRO TIP: if you are using a store bought chicken stock/broth I HIGHLY RECOMMEND sautéing some garlic onion in olive oil in the pan before adding your other ingredients to add homemade flavor and depth! 

    STEPS FOR CHICKEN DUMPLING SOUP:

    Cut up loads of veggies! If carrots and celery aren't your thing add whatever you want!

    bring your stock to a boil and add your carrots and celery. While those start to boil whip up you dumpling dough.

    HOW DO YOU MAKE DUMPLINGS

    In a bowl add all your ingredients together.

    Mix them until they are just combined. Don't over mix.

    HOW TO COOK DUMPLINGS

    Now that your stock is boiling with the veggies and chicken, take small spoonfuls (see pic) of dough and drop into the boiling water. Continue dropping in until dough is gone. Let dumpling boil for about 5-10 minutes, depending on size. Then turn off soup. The veggies and dumplings should be cooked through.

    HOW DO I KNOW WHEN MY DUMPLINGS ARE DONE? CAN I OVERCOOK DUMPLINGS?

    Cooking your dumplings too long will result in tough, hard dumplings. So it is important to stop boiling after about 5 minutes. To ensure your dumplings are cooked through remove a dumpling from the soup, cut in half, if it is still like the dough in the middle it is not cooked through, if it is firm and not doughy it is done! you can also run a toothpick through and if it comes out clean its done

    CAN I MAKE GLUTEN-FREE DUMPLINGS?

    YES!! I have tested and tried gluten free flours and 100% approve cup-4-cup flour for this recipe. It works beautifully! in-fact...the dumplings you see in these photos are all gluten-free! No one will be the wiser.

    WHAT DO SERVE WITH CHICKEN AND DUMPLING SOUP?

    Ingredients

    Chicken Soup

    • 1 whole Chicken meat off bones
    • 32 oz Chicken Stock
    • 4 large Carrots diced
    • 4 stalks Celery diced
    • 1 Bay Leaves
    • 1-2 tbsp salt
    • ½ tsp oregano leaves

    Dumplings

    • 2 Tablespoon Butter melted
    • 2 Eggs
    • 2 C of Flour
    • ½ teaspoon salt
    • ¾ C Milk

    • 3-4 garlic cloves roughly chopped
    • 1 onion quartered
    • 4 celery stalks leave leaves on, rough chopped
    • 4 carrots rough chopped
    • 1 tablespoon oregano leaves
    • t teaspoon thyme leaves
    • t tablespoon salt

    Instructions

    Making chicken stock

    • Place whole chicken and all ingredients in a large stock pot. Fill with water and bring to a boil. Once boiling place lid on and turn down heat so water simmers. Let simmer for 2 hours, or when chicken is fall apart tender. Remove chicken and strain broth.

    Chicken Soup

    • Pull the meat from the chicken and set in broth.
    • Add in meat.
    • Add in remaining ingredients and bring to a boil.
    • Turn back up to a boil and add in your dumplings.

    Dumplings

    • Mix butter salt flour and egg the and milk. the batter will be very thick.
    • Add spoonfuls of batter into boiling soup and boil for 5-10 minutes.
    • Dumplings will rise to the top when cooked.

    For pressure cooker, set to saute and add olive oil. Cook onions and garlic until translucent. Add remaining ingredients. Seal and cook on soup setting for 15 minutes. Use a quick release. Set to saute and bring to a boil. Drop dumpling and cooke for 4-5 minutes. Serve immediately.
