I got this recipe from a friend years ago. She gifted cute soup bowls to all of us girls for Christmas along with her favorite soup recipes. Included in those recipes was this potato and ham soup. The recipe card was titled "The Best Potato Soup You've Ever Had." Certainly worth a try right? I am happy to say that this soup does live up to its title
What Do I Need To Make Potato and Ham Soup?
For this recipe you'll need:
- heavy whipping cream
- milk
- ham steaks
- red potatoes
- carrots
- celery
- green onions
- onion salt
- parsely
- sour cream
- corn starch and water
How Do I Make the World's Best Potato Soup From Scratch?
There are two parts to this recipe - cooking the veggies, and then thickening up the soup. Here is the first half:
Part 1
- In a pressure cooker add diced tomatoes.
- Add celery.
- Throw in some diced carrots.
- Add sliced green onions.
- Cover with water.
- Cook on high pressure for 2 minutes. Use a quick release to release the pressure.
Part 2
- Add milk to the contents of your pressure cooker.
- Pour in heavy cream.
- Add diced ham.
- Thicken your soup with a corn starch slurry.
- Season your soup.
- Add sour cream for extra creaminess.
Pro Tip: A cornstarch slurry is a mixture of a cold liquid with cornstarch. It is used as a thickening agent. A typical cornstarch slurry will consist of 2 parts cold water and 1 part cornstarch.

What Potato Is Best For Soup?
Different varieties of potato have different starch content and skin thickness. They also react to heat differently. Starchy varieties do not keep their shape very well when they are cooked. For that reason I recommend a non-starchy variety of potato - like red potatoes that I've used here. Yukon gold also work well.
Can I Freeze Potato Soup?
While you can freeze almost anything, I would recommend skipping the freezing process on anything potato. Potatoes tend to have an odd texture when defrosted and the soup will not taste the same. So keep this recipe for when you'll be eating it the same day as it is made.

World's Best Potato Soup
Ingredients
- 4-5 Red Potatoes cubed
- 1 bunch green onions Diced
- 3 carrots diced
- 5 celery stalks Sliced
- 3 cups water
- 1 ½ cups ham steak diced
- 3 cups milk
- 8 ounces whipping cream
- 3 tablespoon corn starch
- 6 tablespoon water
- 8 ounces sour cream
- salt
- pepper
- onion powder
- parsley flakes optional
Instructions
- Combine potatoes, green onions, celery, and carrots in a pressure cooker. Cover with just enough water to cover (About 3 cups). Cook on manual pressure for 2 minutes. Use a quick release to release steam.
- Set pot to saute. Add Milk and whipping cream to the cooked veggies.
- Add diced ham.
- Create a slurry of corn starch and water and add to soup. Stir until thickened.
- Season to taste with salt, pepper, onion powder, and parsely.
- Add sour cream and stir until melted.

This was so good! We had it for lunch after playing in the snow all morning! In the future, would love if you could give us the actual measurements you used for the slurry...you know, for us non-experts haha!
