    These S'mores Cookies are the ultimate cookies. Ooey gooey marshmallows with creamy chocolate and a brown butter cookie base. You will not stop till you drop. They are that good.

    What Ingredients Do I Need To Make This S'mores Cookie Recipe?

    1. Pantry Items- you will need the typical cookie making ingredients flour, rising agents, sugar, brown sugar eggs.
    2. Browned Butter- this can be both in liquid form or made ahead and now room temp.
    3. Chocolate Chips- use your favorite or a combination of your favorite chocolate chips.
    4. Mini Marshmallows
    5. Flakey Sea Salt- a good quality flakey sea salt has intense clean salty flavor and goes a lot way. It also add a great texture and enhances the natural flavors of your food,

    How do I make brown butter?

    • Slice butter into tablespoon portions. This helps it melt faster and more evenly.
    • on medium heat in a heavy bottom pan add the butter
    • Keep it on medium heat the entire time. Stirring occasionally.
    • The butter will start to bubble, that is the fat separating from the oil. Its good!

    When the butter is a deep golden brown color immediately remove from heat into a separate dish. Place in fridge for about an hour before using it in your cookies.

    There are brown bits at the bottom are those ok?

    Yes! Those are good, and include all of it in the butter you chill. It has loads of flavor.

    How do I make S'mores Cookies?

    1. Start by creaming your butter and sugars together.
    2. Add eggs and mix.
    3. Combine your dry ingredients and mix.
    4. The Dough will be nice and thick cookie dough. Add in you mallows and chocolate chips and stir until just combined.

    How do I Cut the Cookie Dough?

    One and a half scooper of s'more cookie dough.

    If you do not have a cookie scoop I highly recommend you get one. My favorite size is the 1 ½ tablespoon cookie scoop. For these cookies I did 3 tablespoon cookies. they were like a copycat of my local cookie shop.

    Tips For the Perfect Cookie Texture

    • Roll this dough into balls to keep the add-in's nice and secure.
    • Refrigerate the dough. Especially if you used melted browned butter refrigerate your dough for 1 hour or freeze for 20 minutes.
    • Bake until the edges become firm and are turning a slight golden brown.

    ALWAYS Flakey Sea Salt On Top.

    GUYS. SEA SALT on your cookies is incredible. We all know salt enhances flavor- well it does here too. It enhances the buttery chewy cookies and the rich chocolate.

    PRO KITCHEN TIPS

    Cookie Tips - 

    1. Use a cookie scoop: they help create a more uniform size of cookies and consistency in baking.
    2. Preheat Your Oven: Make sure your oven is fully preheated before baking the cookies. This will make your baking more consistent and even.
    3. Space Cookies Appropriately: Leave enough space between cookie dough ball on your baking sheet. This will prevent them from spreading into each other. t
    4. Underbake Slightly: Remove the cookies from the oven when the edges are just starting to turn golden brown. They'll continue cooking slightly on the hot baking sheet outside the oven. This will result in a more chewy cookie.

    How do I get the melty chocolate chunk tops?

    To get the melty pools on top I like to add a chocolate chunk or two chocolate chips to the very top of the cookie. When the cookies come out of the oven take a butter knife and spread it around a little. Then add the sea salt and it will stick perfectly. The best mouth watering presentation.

    FAQ's

    Can I Make These Gluten-Free?

    YES! I have made these successfully with cup-4-cup gluten free flour. It's simple and turns out fluffy and chewy.

    How come there are not graham crackers in the recipe?

    The brown butter cookie dough recipe gives the graham cracker taste with out adding a gritty texture that can come with adding graham crackers. Trust me. You don't need them!

    How do I Store?

    You can store these cookies and an airtight container for 3-5 days. You can also freeze them for up to 3 months.

    Ingredients

    • ½ cup brown butter
    • 1 cup brown sugar
    • ½ cup white sugar
    • 2 eggs
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla
    • 2 ½ cup flour
    • 1 cups chocolate chips
    • 1 cup mini marshmallows
    • sea salt flakes

    Instructions

    HOW TO MAKE BROWN BUTTER

    • Cut your butter into tbs and add to pan on medium heat. Stir the butter occsionaly as it comes to a gentle bubble. The fat will seperate from the oil and continue to bubble the entire time. It will change from yellow to a deep golden amber color. When it reaches that color remove immediatly. It will burn quickly from there. Place in seperate bowl and let chill for about an hour before adding to the cookie dough.

    CHOCOLATE CHIP COOKIES

    • mix together the brown butter, brown sugar, and white sugar until creamy.
    • add remaining ingredients.
    • put 1 ½ tablespoon of cookies dough on cookie sheet. Refrigerate for 1 hour. Bake 8-10 minutes @ 350 degrees. If making 3 tablespoon size cookies they will bake for about 12 minutes.

    If you are concerned about the marshmallows melting on the pan, it's totally ok if a few of them do that. When the cookies cool you have cut or break off the caramelized marshmallow.

      This is one of my favorite recipes on the blog. I went to make them again and saw the recipe is different. The dough looks and tastes different. Still good, but I miss the original version!
