How do I make brown butter?
- Slice butter into tablespoon portions. This helps it melt faster and more evenly.
- on medium heat in a heavy bottom pan add the butter
- Keep it on medium heat the entire time. Stirring occasionally.
- The butter will start to bubble, that is the fat separating from the oil. Its good!

When the butter is a deep golden brown color immediately remove from heat into a separate dish. Place in fridge for about an hour before using it in your cookies.
There are brown bits at the bottom are those ok?
Yes! Those are good, and keep those included in the butter you chill. It has loads of flavor.

Why do I need dark brown sugar
Dark brown sugar has more molasses in it which makes the cookie have a bit more chewiness. It also enhances the flavor just a tad. If you only have light brown sugar, no biggie, use that!

How do I make chocolate chip cookies?
Start by creaming together your sugars and butter

With the mixer on medium speed continue to add eggs, salt, baking soda, vanilla and flour.

Add chocolate chips
Fold in your chocolate chips.
What chocolate chips do I use?
Typically everyone has their own personal preference with chocolate chips. You can add your very favorite. Dark chocolate, milk chocolate, semi sweet or a combo.

Before you bake
One key to having a more fluffy chewy cookie instead of a flat crunchy cookie is attributed to how cold your butter is in your dough. Before you bake place your cookies in the fridge for 30 minutes, or the freezer for about 15.

Bake your brown butter chocolate chip cookies
Use a cookie scoop so your cookies are all evenly formed. I am using a 1 ½ TBS cookie scoop and 12 cookie will fit on one sheet cake pan.

Bake your cookies
Bake your cookies for about 8 minutes. It's hard to say exactly how long simply because your cookies may be bigger or smaller and all ovens cook differently. Different climates come into play here too. You want to look for the edges turning a slight golden brown and becoming firm.

Add flakey sea salt on top.
GUYS. SEA SALT on your cookies is incredible. We all know salt enhances flavor- well it does here too. It enhances the buttery chewy cookies and the rich chocolate.
If I'm adding sea salt on top do I add it into the cookie dough?
If you are using salted butter and adding sea salt to the top you can omit the salt in the dough. I choose to keep it all and don't feel it is too salty in the least.

How do I get the melty chocolate chunk tops?
To get the melty pools on top I like to add a chocolate chunk or two chocolate chips to the very top of the cookie. When the cookies come out of the oven take a butter knife and spread it around a little. Then add the sea salt and it will stick perfectly. The best mouth watering presentation.

Can I make these gluten-free?
YES! I have made these successfully with cup-4-cup gluten free flour. It's simple and turns out fluffy and chewy as do the cookies with wheat flour.

Ingredients
- 1 cup brown butter
- 1 cup brown sugar
- ½ cup white sugar
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 ½ cup flour
- 2 cups chocolate chips
Instructions
HOW TO MAKE BROWN BUTTER
- Cut your butter into tbs and add to pan on medium heat. Stir the butter occsionaly as it comes to a gentle bubble. The fat will seperate from the oil and continue to bubble the entire time. It will change from yellow to a deep golden amber color. When it reaches that color remove immediatly. It will burn quickly from there. Place in seperate bowl and let chill for about an hour before adding to the cookie dough.
CHOCOLATE CHIP COOKIES
- mix together the brown butter, brown sugar, and white sugar until creamy.
- add remaining ingredients.
- put on cookie sheet. Make 8-10 minutes @ 350 degrees.
- yeilds 3 dozen 1 ½ tbs cookies
