    Heathy Chocolate Muffins

    These easy, fast healthy chocolate muffins are the perfect breakfast solution for your busy mornings! Fluffy, chocolatey and healthier than your standard muffin mix these will be a family favorite! I'm showing how + giving you tips to easily make them gluten free!

    WHAT YOU NEED TO MAKE HEALTHY CHOCOLATE PUMPKIN MUFFIN

    What makes the muffins SO DANG EASY and FAST is that we use a cake-mix as your base. So you don't have to spend time measuring out flour, baking soda, salt, sugar cocoa etc. You just dump a bag of your favorite cake-mix.

    What makes these pumpkin muffins HEALTHIER than your standard muffin is that you use pumpkin and egg whites!

    • optional: cinnamon and chocolate chips (I also subbed cacao nibs as a healthier option!)

    HOW TO MAKE THESE HEALTHY MUFFINS GLUTEN-FREE

    Gluten-Free Cake mixes 100% DO WORK with this recipe, and it really is that easy in making these muffins gluten free.

    WHAT GLUTEN-FREE CAKE MIXES DO I USE?

    All three of these gluten-free cake mixes work. I've tried them and they are delicious. You do have to watch your ingredients however- 2 of these cake mixes are much smaller than the King Arthur. This recipe if for a cake mix that makes 24 cupcakes. So you either need to half your eggs and pumpkin or use two cake mixes.

    HOW TO MAKE EASY CHOCOLATE MUFFINS

    Add cake mix and all ingredients to your bowl and mix.

    In a cupcake pan, line spray with a non-stick spray or you can use either parchment liners or silicone. I'm a huge fan of silicone!

    Bake your cupcakes! standard cupcakes will need to bake for about 15 minutes.

    PRO TIP: Gluten-Free cakes tend to not form a "muffin top" they are more flat, and dont rise. 

    HEALTHY PUMPKIN MUFFIN PRO-TIPS

    Change it up. Add nuts, cacao nibs, or  chocolate chips!

    Spice the recipe.  Instead of grabbing plain pumpkin puree grab the pumpkin pie puree which usually includes: cinnamon, ginger, nutmeg and allspice. Or, add 1  teaspoons ground cinnamon with your pumpkin puree.

    This muffin recipe is special diet-friendly. I've already shown you it's easily altered to be gluten free! but it is also dairy free depending on your cake mix (GF king arthur is!) This cake mix muffin recipe is also only 2 points on the weight watchers list!

    Whenever I make muffins (no matter what recipe- but especially these Buttermilk Banana Muffins) I make one tin of 12 standard muffins and save them for later. You can freeze (microwave for about 15 sec when ready to eat) or keep at room temp for a week. And then I make these mini muffins for the day of! My kids LOVE it and it changes it up a little.

    Ingredients

    • 1 box Chocolate Cake mix that makes 24 cupcakes/ can be gluten free
    • 2 egg whites
    • ⅔ Cup water
    • 14 ounces can pumpkin
    • 1 teaspoon vanilla
    • 1 cup cacao nibs
    • 1 teaspoon cinnamon optional

    Instructions

    • Mix all ingredients
    • Fill in cupcake tin and bake.
    • 350 for about 15 minutes

    Notes

    If using a cake mix that only makes 12 cupcakes half the other ingredients ie 1 egg white, ⅓ cup water half the can of pumpkin
