Easy and healthy chocolate muffins

Ingredients
  • 1 Chocolate Cake mix that makes 24 cupcakes/ can be gluten free
  • 2 egg whites
  • 2/3 Cup water
  • 1 14 oz can pumpkin
  • 1 tsp vanilla
  • 1 cup cacao nibs
  • 1 tsp cinnamon optional
Instructions
  1. Mix all ingredients
  2. Fill in cupcake tin and bake.
  3. 350 for about 15 minutes

Recipe Notes

If using a cake mix that only makes 12 cupcakes half the other ingredients ie 1 egg white, 1/3 cup water half the can of pumpkin

HEALTHY PUMPKIN MUFFIN PRO-TIPS

Change it up. Add nuts, cacao nibs, or  chocolate chips!

Spice the recipe.  Instead of grabbing plain pumpkin puree grab the pumpkin pie puree which usually includes: cinnamon, ginger, nutmeg and allspice. Or, add 1  teaspoons ground cinnamon with your pumpkin puree.

This muffin recipe is special diet-friendly. I've already shown you it's easily altered to be gluten free! but it is also dairy free depending on your cake mix (GF king arthur is!) This cake mix muffin recipe is also only 2 points on the weight watchers list!
