    Chocolate Banana Pancake Skewers

    Tender, fluffy blender pancakes - made in mini form.  These chocolate banana pancake skewers are topped with chocolate hazelnut spread, banana, and berries for a perfect brunch item!

    What Are Pancake Skewers?

    I like to call these pancake silver " dime" pancakes because they are smaller than silver dollar pancakes.  A pancake skewer uses mini pancakes along with fruits and other toppings to skewer along with the pancakes.  These are perfect for brunch!

    What Do I Need To Make Chocolate Banana Pancake Skewers?

    For this recipe you'll need:

    • 1 ½ cups milk
    • 1 egg
    • 2 teaspoon canola oil
    • 1 cup flour
    • 2 teaspoon baking soda
    • 1 teaspoon salt
    • 1 tablespoon sugar
    • 2 bananas sliced
    • ½ pints strawberries, hulled and sliced
    • ¼ blueberries

    How Do You Make Pancake Skewers?

    These babies are a bit smaller than a silver dollar pancake, so I like to call them silver dime pancakes.  You need only a half tablespoon of batter for each cake.  I love using my griddle for making these.  You can make more than you can in a pan, and the nonstick surface makes for perfectly browned flapjacks.

    1. In a blender jar combine milk, egg, and oil.

    2. On top of liquids add flour, baking soda, salt, and sugar.

    3. Blend until well combined - about 30 seconds.

    4. Use a ½ teaspoon measuring spoon to portion out batter onto a nonstick skillet.

    Pro Tip: placed liquids at the bottom of the blender.  This keeps the blade from beginning stuff with food.

    5. When bubbles begin to form on the surface, flip the pancakes over. This recipe makes about 52 mini pancakes.

    6. Spread chocolate hazelnut spead onto the top of a few of the pancakes.

    7. Skewer with blueberries, a banana slice, and a strawberry slice.  Use 4+ pancakes per skewer.

    8. Serve immediately.

    Can I make these ahead of time?

    You can make the pancakes a few hours ahead of time - or make them and freeze.  They freeze for about 3 months. Skewer the day you are serving them.

    Can I freeze these mini pancakes?

    These pancakes freeze like a dream.  If you aren't able to use all of them, package plain pancakes in an airtight container and freeze for up to 3 months.

    Variations

    • Add mini chocolate chips or blueberries to your pancake batter.
    • Switch up the toppings - raspberries, oranges, or marshmallows would be nice.
    • Change the flavor of syrup you serve them with.

    • 1 tablespoon sugar
    • 2 teaspoon canola oil

    • ¼ cup mini chocolate chips optional

    • 1 carton blueberries
