Have you ever heard of Apricot Chicken?! It's amazing and you are going to want to give it a try. A few Sunday's ago I entertained my in-laws for dinner. It's always nice to have company over and give the nice dinnerware some use! I served this apricot chicken with veggies, fresh fruit and a few other small sides. The dinner turned out great. I doubled the recipe and cooked about 4 cups of rice. We had 6 adults and 4 children eating with plenty to go around. If we would have wanted seconds- tripling the recipe would have been perfect. My mother-in-law was raving about how delicious dinner was and how she wanted the recipe. Always good to earn some brownie points with the MIL.
Tips to Make Apricot Chicken
This is a absolutely simple and delightful dinner that my good friend give me. I don't know where this Apricot Chicken has been all my life, but it is a new favorite!! {And my husbands regular pick for dinner!} What is amazing about this dish is how simple it is. Truly anyone can pull this off- three ingredients over chicken in the crockpot for a few hours and it's done! Just a tip for easy cleaning, before adding the ingredients to the crockpot, give the inside of the crockpot a quick spray with cooking/vegetable oil spray. If you want to amp up the healthy factor, stir fry some veggies. When you are ready to serve, place the rice in a bowl with a large serving of the stir-fried veggies and cooked chicken. It's so good! The sauce from the chicken really compliments any vegetable beautifully!
Just look at that sauce! You are going to think that it's sweet savory flavor is ridiculously delicious too!! I have a nurse friend who was complaining about how she has such a hard time pulling of dinner while gone at work all day, I recommended this to her. She tried and came back raving about it for like a week! So funny! I could go on and on about this recipe, but hopefully your will trust me when I say its EASY and DELICIOUS.

Ingredients
- 1 cup Catalina Island Dressing
- 1 cup Apricot Preserves
- 1 packet Lipton Onion Soup Mix
- 3-4 trimmed Chicken Breast
Instructions
- Place the dressing, preserves, and onion mix in a slow-cooker and stir to combine,
- Place the chicken in a coat with mixture.
- Cook on low for 6-8 hours or high for 3-4.
- When done, shred and serve over rice.
Notes
PRESSURE COOKER: Place all ingredients in pressure cooker, close and lock lid and vent. Poultry setting 10 minutes, let naturally release. Shred chicken and serve as directed.

This sounds delicious! I make a similar dish using one can of Whole Berry Cranberry Sauce instead of Apricot Preserves. I can't wait to try this! :)
