These thai lettuce wraps are my favorite, ALL TIME FAVORITE. They are inspired from a restaurant called Pei Wei. Every time we go I order these crunchy, sweet and spicy wraps. I crave them, anticipate them, love them. Then the last time I showed up to the restaurant they were gone. discontinued. disgraceful. The only thing left to do is to re-create the recipe for myself.
This is the perfect lunch recipe for everyone who is starting their new year's diets and resolutions. Make a big batch of the seasoned ground turkey, chop up your fresh veggies and store them in seperate air tight containers. Every day I will pull out a few lettuce leaves, warm up a bowl full of turkey and add the crunchy veggies. The cucumbers are my very favorite addition. They are crisp and cool, with the sweet and savory turkey, paired with crunchy lettuce. This meal is divine! and so filling.
To start, I like to use fresh ground turkey. This Foster Farms Organic turkey is the best! It's lean and a great source of protein. It's grown here in the US- California to be exact! There are no antibiotics, hormones or steroids. All turkey's are raised free-range on organic land and fed an organic vegetarian diet. You can never be too careful with your meat, especially now-a-days, so I really am careful to choose foster farms organic. They are a brand I trust.
How to make thai lettuce wraps
These lettuce wraps whip up really quick. I like to have most my items out and ready to be cooked and cut before I start.
Start by browning your turkey. While the turkey is cooking in a separate bowl mix up the sauce. Once the turkey is done pour the sauce over, add peanuts and let it simmer for about 10 minutes. This ensures that the flavor is rich and marinated into the meat.
While the sauce and turkey are simmering wash and prepare your fresh veggies. You can dice them, slice them, it really doesn't matter- just make sure you have them. Never leave out the cool cucumber. That bad boy is a necessity.
I serve these lettuce wraps with additional peanuts and limes. The tart lime flavor over the savory meat and crisp veggies gives these the ultimate flavor burst.
When serving for company
I love to have friends over for lunch and make these. It's great for all diets! When I make this dish for friends and company I will make up additional sauce and simmer it alone in a small pot. I serve it on the side for friends to pour extra sauce on if desired. I also love to serve it along side some sweet coconut rice! It's a filling, lean meal. It is a dish that EVERYONE loves and doesn't add inches to anyone waste band :)
Thai Lettuce Wraps
Ingredients
- 1 lb ground turkey
- ¼ cup soy sauce
- ¼ cup sweet chili sauce
- ¼ cup hoisin sauce
- ¼ cup water
- 1 teaspoon sriracha sauce add more for more heat
- 2 tablespoon rice vinegar
- 2 garlic cloves minced
- 1 teaspoon fresh grated ginger
- 2 juiced limes
- ½ cup chopped salted peanuts
- lettuce- your favorite romaine or other
- chopped cilantro
- lime slices
- 1 cucumber, sliced thin
- 1 red bell pepper sliced thin
Instructions
- In fry pan brown ground turkey until done.
- In sperate bowl mix soy sauce, chili sauce, sriracha sauce, rice vinegar, garlic, ginger, lime juice. Stir until well combined. Pour into cooked ground turkey pan. Add chopped peanuts. Turn heat down and allow to simmer for 10-15 minutes.
- Prepare lettuce, herbs, and fresh vegetables. After turkey has simmered assemble lettuce wraps with turkey, cucumber, bell pepper, cilantro, additional limes and peanuts if desired.
