Greek Quinoa Bowl

I’ve been really into meals in a bowl lately.  It is so visually appealing to see all of the ingredients in my bowl ready to be tossed together.  I also love having tasty fresh ingredients for a meal.  Some of my favorite flavors are definitely greek flavors.  I love the bite and zing of kalamata olives along with cool cucumber and smooth feta.  So my obsession with bowl meals and my craving for mediterranean food inspired this healthy and easy meal.

I marinated some chicken breasts and grilled them up as the protein for this meal.  I also added quinoa that I cooked in chicken broth for some extra flavor.  Tomatoes, cucumber, kalamata olives, and feta were a must!  And I added in some avocado for an extra creamy touch.  I drizzled the bowl with a little greek dressing, a pinch of dill, and a squeeze of lemon.  This meal is perfect for a quick lunch or an easy weeknight dinner.

Greek Quinoa Bowl

Delicious tangy greek quinoa bowl

Servings: 1 serving

Ingredients
Marinated Chicken
  • 1 chicken breast
  • 1/8 cup olive oil
  • juice from half a lemon
  • 1 clove garlic minced
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
Bowl Ingredients
  • 1 prepared grilled chicken breast sliced
  • 1/4 cup cooked quinoa cooked in chicken broth
  • 1/2 cucumber diced
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sliced kalamata olives
  • 1/2 avocado sliced
  • 1/4 cup crumbled feta cheese
  • 1 tsp fresh dill minced
  • juice from half a lemon
  • 2 tbsp store bough greek dressing
Instructions
Marinated Chicken
  1. Combine all ingredients in a large ziplock back and marinate at room temp for 30 minutes.
  2. Cook over medium heat on a gas or charcoal grill until juices run clear - about 10 min per side.
  3. Let rest for 5 minutes.
  4. Slice chicken breast.
Bowl Assembly
  1. Place chicken, cucumber, tomatoes, feta, quinoa, and avocado side by side in a medium sized bowl.
  2. Squeeze lemon juice on top.
  3. Sprinkle with fresh dill.
  4. Drizzle with greek dressing.
