Candy Cane White Chocolate Fudge

I’m kind of a fudge person. I love fixing up a batch and having the little bite size pieces to snack on through out the holidays. Fudge is pretty simple and can be whipped up in about 15 minutes. The base of this recipe is the one my grandmother uses. What is funny is I was assuming I had some old time classic fudge recipe – coming from my grandma. So this year, I was whisking up a batch of chocolate fudge when I decided to read the back of the marshmallow cream bottle. And I was shocked to see Kraft had stolen my Grandma’s recipe! How did they get their hands on her classic?!

Well then common sense kicked in and I realized my grandma was just practical and used the Kraft recipe. So while there is nothing old-time or classic about this recipe, is it a solid one. The base to this recipe is great as well.. you can mix it up to be whatever you want. This year I decided to try out a little white chocolate and peppermint. It turned out fantastic! Reminded me of the white center of peppermint patty. Then I decided to take it a step further and drizzle a little milk chocolate over. That really made it taste amazing. Yes they are rich, but that is the purpose of fudge. A rich small morsel as a side treat.

One pan of fudge can be cut down in to so many pieces. I like to use a 9×13 pan and cut them down to get over 40 pieces. Makes it easy to share the love and give away on treat plates. Pair this fudge with some soft caramels or maybe some gingerbread men.. and that is a treat plate your neighbors are going to love!

  • 3 C sugar
  • 6 T butter
  • 3/4 C evaporated milk
  • 12 oz. white chocolate
  • 7 oz. marshmallow cream
  • 1/2 tsp vanilla
  • 1 1/2 tsp peppermint extract
  • optional:
  • crushed candy candy
  • milk chocolate for drizzling
  1. In a medium sauce pan on medium-high heat, melt butter.
  2. Add sugar and milk. Whisk until throughly combined.
  3. Bring to a boil and boil for 4 minutes while continuing to whisk. (Reduce heat if you see brown flecked.. that is the candy scorching)
  4. Remove from heat and slowly add in chocolate stirring to incorporate.
  5. Add in marshmallow cream, vanilla and peppermint. At this point I like to use a silicone spatula. The whisk is a little difficult.
  6. When combined press into a grease 9x13 or 8x8 pan.
  7. If only using crushed candy cane, pour immediately over white fudge.
  8. If drizzling chocolate, drizzle chocolate first, then top with candy cane.
