
Who says eggs are JUST for breakfast? Nobody.

Eggs are a perfect protein for every meal! This was my lunch today and it was dang good. I felt satisfied and treated all at the same time.
I love Mediterranean food. The combination of flavors and textures is heaven for me. So when I created these mini frittatas I knew exactly what I would be putting inside of them. I added kalamata olives, feta cheese... my fav fav fav!, marinated artichoke hearts, and dill. If I had had a few tomatoes in my fridge I would have diced one and thrown it in as well, but today is grocery day and the pickings were slim from the produce drawer.
This is an easy meal prep menu item because you can store these in a ziplock bag in the fridge and warm a few up for a quick, delicious lunch - or breakfast on the run!
As I am progressing along on my Weight Watchers journey I am really learning to eat for life. I mentioned in an earlier post that I am not the type of person who can swear off dairy or wheat for the rest of my life, so Weight Watchers was the perfect solution. I love that nothing is off limits, yet it encourages you to make healthy choices that will make your body run more efficiently and help you to feel better!
The biggest change that I have noticed, aside from my pants being lose, is that I feel more energized. I am not getting that huge afternoon crash that I once did. I believe it is because I am fueling my body rather than giving it the bare minimum. During my last convo with my coach, Shawna, we set some goals. We decided that I would work on consuming 5 fruits and veggies each day - and I've done it! I make sure to get in at least 1 serving in each meal and then snack on another during the day. I love checking off those healthy checks on my food log and feeling like I've done something great for myself. Self care is key in this life. You are special. I am special. And we need to treat ourselves like we are.
One little fact that my coach told me about during our last call was that Weight Watchers members who consume 2 servings of dairy per day burn more fat than those who don't! I always get in 1 serving with my morning protein shake, but getting in that 2nd is sometimes a challenge. Hearing that detail really gave me the motivation to add in that additional serving during the day. Not only is that serving good for you - it's going to boost your weight loss, so why not!!?
This past week my husband and I treated ourselves to a date night. We got a sitter. We ate at a restaurant and we saw a movie. During my call with my coach she asked me what challenges I had coming up and I mentioned this night out to her. She told me that I could 100% participate and enjoy this night without breaking my points bank. I was mindful of my points during the day that day, and then had a sensible dinner, and treated myself to sharing a small popcorn with my husband. I tapped into the bonus points that you get each week on Weight Watchers and didn't feel guilty at all. I love that I can live life and enjoy life and still be on track for weight loss! I feel like that call with my coach keeps me accountable and helps me conquer things that made me spin off of my track in the past.

Mediterranean Mini Frittatas
Ingredients
- Nonstick cooking spray
- 10 eggs
- ½ cup low fat milk
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon dried parsley
- 3 marinated artichoke quarters chopped
- 6 kalamata olives sliced
- 1 ounces feta cheese crumbled
- 1 teaspoon dill chopped
- 1 to mato diced
Instructions
- Preheat oven to 375 degrees.
- Spray a muffin tin with nonstick spray.
- Distribute artichokes, feta, olives, tomato, and dill between 12 muffin cups in your muffin tin.
- In a medium bowl whisk eggs, milk, garlic powder, salt, pepper, and parsley.
- Fill each muffin cup nearly full with egg mixture.
- Bake at 375 for 15-17 minutes until slightly puffed and firm.
- Remove from oven and let cool 5 minutes. Loosen edges with a rubber spatula and remove.

I love eggs and Mediterranean flavors, so this is a perfect combo. I went to Weight Watchers many years ago and it worked for me. Now as a 55yo mom, nurse, new grandma, I HAVE to get on track. I can feel it in the way I move, how my clothes fit, etc.

Hi Tabathia, I plan on sticking with weight watchers until I reach my goal weight, and then I plan on incorporating the eating skills into my life forever. Leaving healthfully and mindfully is something you have to commit to forever. And with 2 little kids, I have a lot of reasons to want to be as healthy as I can.

I seriously love your blog! Yum! So far this year, I've been doing my T25 videos and I've gone 3 days without my beloved pop. I have also challenged myself to drink more water in order to kick to pop habit (there is only so much liquid I cam drink in a day, might as well be the good-for-you stuff).
