    Lunch for Mom // Cucumber Sandwich

    While you are packing your kids fun, healthy and creative lunches -- may I suggest that you pack on for yourself as well?  It may sound crazy - but it is giving yourself a little gift.  The gift of self care through a healthy and filling lunch.  Packing a lunch for mom will not only help you with portion control, but it will also keep you out of the drive thru while you're out running errands.  And I promise you'll be so much more satisfied with a lunch like this than you would with a greasy burger and fries.  So this week, while we are highlighting lunches to send to school with your kids, I wanted to spend one post on the moms.

    We love PlanetBox around here.  Their stainless steel divided lunch boxes make packing a lunch so fun.  I love their instagram account - it is full of fun lunch ideas.  Today I wanted to share a more grown-up lunch idea for stay at home moms or for working moms.  Packing a lunch is such a healthy routine.  You can plan ahead and make sure that you are getting the nourishment a busy mom needs, as well as watch your waistline.

    For this lunch I started with a rustic twist on Aubrey's English Tea Cucumber Sandwiches.  My friend Cheyenne (Hi Cheyenne!) is often found at the park with a simple cucumber sandwich - wheat bread, cream cheese, and cucumber slices.  She gave me a sample one day and I loved it!  So simple, so fresh, and so delicious.  So today I am using lavash bread, whipped cream cheese, and cucumber slices as the main element to my lunch.  Most grocery stores carry lavash these days - but I think plain ol' wheat bread tastes fantastic as well!

    I added a few mini skewers of pickle, tomato, and pepper jack - an appetizer my mom often makes at baby showers.  On the side, some sliced green apple with a wedge of laughing cow cheese.  This combo is heavenly.  For a little salt, I added some roasted pistachios - they always satisfy my craving for chips.  And because you deserve it - a sweet little chocolate for dessert.  Pair this with a bottle of water and you won't feel guilty about your lunch!

    Rustic Cucumber Sandwich

    Ingredients

    • 1 piece of lavash bread
    • 2 Tablespoon whipped cream cheese
    • sliced cucumber - about 6 slices

    Instructions

    • Cut bread in half.
    • Coat both sides with cream cheese.
    • Layer cucumber, and press slices together.
    • Cut into wedges and serve.
