WHATS THE DIFFERENCE BETWEEN FLATBREAD AND PIZZA DOUGH?
Technically there is a difference between the yeasts with flatbread and pizza dough, but mostly Flatbreads are usually a rectangular shape with a thinner, crispier crust and lighter toppings, whereas pizza usually has a thicker crust, larger amounts of sauce, cheese, and toppings. So for this recipe you can roll the dough thinner and grill a flatbread pizza, or make it a little thicker for a traditional pizza.
WHAT DO I NEED TO GRILL PIZZA DOUGH?
You can use any grill or even griddle pan! Gas, coal, smoker or on your stove top. All will work and have the same steps. I definitely would recommend an outdoor grill over a grill pan on the stove, but as you can see below it works! Sometimes I do it when the weather isn't optimal for grilling.
THE PIZZA DOUGH
For this recipe I use my tried and true no rise Pizza Dough recipe. It's so simple, very fast and no-fail. Seriously friends, it will change your weeknight game. You'll be making homemade pizza once a week with this dough.
HOW TO MAKE PIZZA DOUGH FOR GRILLED PIZZA
Start by adding all your dry ingredients to your stand mixer. You will not want to use ALL the flour right at first. Start with 1.5 cups of flour.
- Flour
- salt and sugar
- shortening
- yeast in last
- Mix your dry ingredients together and while the mixer is mixing slowly add in your hot water.
- Let your dough kneed for about a minute
- You will need to add in a little more flour, about .5 cup-1 cup.
HOW DO I KNOW HOW MUCH FLOUR TO ADD
funny thing about bread making is that your altitude and humidity can effect the dough. I've never added more than 2.5 cups in my different regions Ive lived. HOW YOU WILL KNOW when you have added enough flour is the dough will pull away from the side but still be very sticky. Can you see the difference in picture 2 and 4 below?
CAN I LET IT RISE IF I HAVE TIME?
YES! I usually will let my dough sit in the bowl while I pull out my ingredients for toppings, get a few other things going. Because it has warm water the dough is warm and rises fast. But if you are in a rush, by all means roll this puppy out!
Dividing it into 4 even balls. You can even do 6 balls for smaller personal pan size pizzas.
Roll our your dough into desired shape. I'm choosing my dough to be a rectangle, like a flatbread pizza. Make sure that your pizza is no larger than your grill.
HOW TO MAKE GRILLED PIZZA
PREHEAT YOUR GRILL
You will want to have your grill preheated before you place the dough on the grill. When you preheat the grill close the lid so it can heat evenly and quickly.
OIL YOUR GRATE!
This is one step that can not be forgotten. Make sure you generously oil your grate on your grill. I put a little oil on a paper towel right before I place on the pizza.
HOW TO PUT PIZZA DOUGH ON GRILL
Now that you have oiled your grate gently lay the pizza dough on the grill nice and even, if parts of it scrunch up or flip over its not a big deal. You might be able to gently fix it, but chances are the dough might already be stuck to the grill.
HOW DO I FLIP MY PIZZA OR FLATBREAD?
When the dough is cooked on one side it will slide right off that grate. If the dough is not cooked OR it wasn't oiled well it will stick to the grate on the grill. This is why oiling the grate is so important. Once the dough is cooked on one side it will flip to the opposite side Usually just a couple of minutes on each side!
DO I COOK THE TOPPINGS ON THE GRILL TOO?
NO, for the next step you will remove your grilled pizza dough to a baking sheet. From here you will want to add all your toppings and bake.
WHAT KIND OF SAUCE DO I USE FOR GRILLED PIZZA?
Any of your favorites! When i am using a gourmet combo I like to keep it simple with just olive oil and garlic. BUT this is your pizza you can go crazy how YOU want.
- olive oil and garlic
- marinara
- pesto
- alfredo sauce
WHAT ARE GOOD TOPPINGS FOR GRILLED PIZZA?
Because of the sophisticated grilled flavor of grilled pizza you can really be creative and everything till taste delicious! Here are some gourmet options that I personally love!
- caramelized onions, grill peaches, fresh basil and burrata cheese
- margherita pizza with fresh mozzarella
- prosciutto, arugula, fresh mozzarella and lemon
BAKING THE GRILLED PIZZA
With the pizza loaded with cheese and toppings you will place in the oven for just a a few minutes until everything is melted!

Grilled pizza
Ingredients
- 1 cup hot water
- 1 Tablespoon sugar
- 1 teaspoon salt
- 1 Tablespoon shortening
- 1 Tablespoon yeast
- 2 cups flour
- ½ cup olive oil or avocado oil
- 2 Tablespoons garlic
- toppings
Instructions
- Combine 1.5 cups of flour and remaining ingredients, putting yeast in LAST. Mix dry ingredients, pour in hot water until well blended and sticky. Slowly adding flour until dough forms a ball and pulls away from the side of the mixer. (about ½ cup more -1 cup)
- Divide dough into 4-6 equal balls
- Four a surface and roll out dough till very very thin.
- Preheat grill to med-high. Oil the grates and gently lay the dough on the grates. Grill for about 2 minutes each side. The dough will come off easily when cooked but will stick when its still dough. Flip when one side is cooked and cook the other side for 2 minutes.
- Remove from grill when cooked place on baking sheet. Add toppings and bake or broil until the cheese is melted.
