So here I am six weeks post baby and I find myself STARVING because I am nursing every 2 ½ hours, un-showered, dried spit up all over my clothes, no makeup and bags under my eyes because I haven't slept a straight 4 hours in almost two months. The common story of a new (2nd time) mom. I am TIRED and cooking gourmet meals is not on my number one to-do list. Hopefully showering every day is....
I just can't seem to find the time to do it all, but eating is a necessity and I have to do it for me and my family, so here's the solution. Easy, quick, meals/snacks. This one is my Avocado Feta Toast.
I eat it all the time because it literally takes me five minutes to make. Four ingredients: sourdough bread (or whatever you prefer), ripe avocado, feta cheese, and tomato.
And then to top it off I sprinkle salt and pepper and add a dash of lime juice. SOOOOO yummy!
Avocado Feta Toast
Ingredients
- 1 avocado mashed
- 1 tomato 2 or 3 slices
- ⅓ cup feta cheese
- 1 slice sourdough bread
- salt and pepper
- 1 squeeze of ½ a lime
Instructions
- Toast your bread.
- Spread avocado onto your toasted bread
- Place 2-3 tomato slices on top of avocado
- Sprinkle feta cheese over the avocado
- Salt and pepper to taste
- Add a dash of lime juice
