Crispy, salty. cheesy, baked zucchini! Doesn't that sound amazing? You'll never believe how easy this parmesan crusted zucchini is to make! It's always a hit and a great way to enjoy summer zucchini.
1 cup parmesan cheese fresh, grated
½ teaspoon sea salt
½ teaspoon garlic salt
¼ cup parsley chopped
½ cup olive oil
2-3 med zucchini
Cut the zucchini.
Coat the zucchini in olive oil.
Mix together the cheese with salt and garlic salt. Toss with the chopped parsley.
Dip both sides of the zucchini pieces into the parmesan mixture and coat both sides.
Place Zucchini on a wire rack to allow air to circulate making them nice and crispy.
Bake until both sides are golden brown and crispy.
