Easy Rice Paper Rolls with Mango and Avocado

Crisp carrot, cabbage, cucumber, bell pepper, mango, and avocado come together in this easy rice paper rolls recipe with the best Thai peanut dipping sauce!

Ingredients:  – 8 rice paper rolls  – 1 cup green leaf lettuce  – ½ cucumber  – 1 carrot  – ½ red bell pepper – 1 cup purple cabbage  – 1 mango  – 1 bunch cilantro leaves  – ½ jalapeno  – 1 avocado 

Ingredients:  Thai Peanut Dipping Sauce: – ½ cup peanut butter – 2 tablespoon rice vinegar – 3 tablespoon soy sauce – 2 tablespoon brown sugar – 1 teaspoon fresh ginger  – 2 cloves garlic – 1 teaspoon chili garlic sauce – water – garnish with chopped peanuts and cilantro

1. Cut your veggies. 2. Cut your mango. 3. Dip the rice papers. 4. Moisten only for a few seconds.

5. Transfer the rice paper. 6. Add cabbage. 7. Top with cucumber. 8. Add red bell peppers.

9. Top with shredded carrot. 10. Add a few thin mango strips. 11. Layer on avocado. 12. Garnish with cilantro and jalapeno.

13. Roll up by starting on one side. Cover your fruits, veggies, and tuck. 14. Continue rolling up the bundle. 15. Fold in the side edges of the paper. 16. Complete rolling up the bundle until the back edge is sealed against itself.

Make Thai Peanut Dipping Sauce 1. Combine all the ingredients in a saucepan.

2. Heat over medium-high heat, stirring constantly until peanut butter is melted and all ingredients are well combinded.
