Coffee  Cake Mufins

Classic coffee cake transformed into easy moist coffee cake muffins. Our recipe features moist and fluffy muffins topped with a generous layer of buttery cinnamon streusel. These mouthwatering treats are the perfect balance of tender cake and crispy crumble. Enjoy them for breakfast, brunch, or anytime you get a craving for one!

Ingredients – 2 cups bisquick – ⅔ cup milk – 1 egg – 2 TBS sugar – ½ cup fresh blueberries  Crumb Topping – ¼ cup bisquick – ⅓ cup brown sugar – 1 TBS sugar – ¼ teaspoon cinnamon – 3 TBS cold butter Cinnamon Swirl (if Desired) – ¼ teaspoon sea salt – ½ cup brown sugar – 2 teaspoon cinnamon

1. For cinnamon swirl, combine brown sugar, salt, and cinnamon in a medium mixing bowl.

2. Whisk until well combined. Set aside.

3. In a bowl add cold butter. 4. Add in dry ingredients and mix well. 5. Using two forks, but in the butter so you have a crumbly mixture. 6. Set aside.

7. In a large mixing bowl add Bisquick and sugar. Stir to combine. 8. Add in egg and milk to dry ingredients. 9. Stir together until completely mixed. 10. Spoon cake batter into prepared muffin cup. 

11. Layer in your mix-ins. 12. Top with batter and fill to the top. 13. Add crumb topping to the top. 14. Reduce oven heat to 350 and bake for 15-20 minutes.
