Ritz Cracker Chicken (Easy Dinner)

This Ritz Cracker Chicken is coated in Greek yogurt and a cheesy cracker topping, then cooked until perfectly tender on the inside and crunchy on the outside. It’s an easy dish that’s sure to be a hit with the whole family!

Ingredients

  • 2 cups Ritz crackers crushed (about 30 crackers)
  • 3 tablespoons Parmesan cheese
  • 2 teaspoons seasoning salt
  • 1 ½ cups plain nonfat Greek yogurt
  • Oil cooking spray
  • 1 ½ pounds chicken tenderloins

Instructions

  • Place Ritz crackers, Parmesan, and seasoning salt in a food processor or blender. Pulse until you have fine crumbs.
  • Dip each chicken tenderloin into the Greek yogurt, coating both sides. Press into the cracker mixture until fully covered.
  • Place coated chicken on a lightly greased baking sheet (or air fryer basket). Spray the tops with cooking spray to help them crisp up.
  • Oven: Bake at 350°F for 20 minutes, or until chicken reaches an internal temperature of 165°F.
  • Air Fryer: Air fry at 350°F for 15 minutes, flipping halfway through if needed, until crispy and fully cooked.

Notes

  • If the chicken seems too wet, pat it dry with paper towels before dipping to help the coating stick better.
  • Be sure to leave a little space between each piece of chicken in the air fryer basket or on the baking sheet to ensure even cooking.
