Ingredients
  • 2 cups strawberries slices
  • 1 lb rhubarb about 3 cups
  • 1 1/2 cup sugar
  • 3 Tbsp tapioca
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 Tbsp butter
  • 1 egg
  • 3 Tbsp water
Instructions
  1. Cut rhubarb into 1/2 inch pieces (about 3 cups).
  2. Add fresh strawberries.
  3. Add remaining ingredients and mix to coat fruit.
  4. Let stand 20 minutes. Meanwhile, prepare pie crust (See link above for recipe).
  5. Fill with fruit mixture.
  6. Dot with butter.
  7. Put pie crust on top.
  8. Bake at 400 for 35-40 minutes.
Egg Wash
  1. lightly beat egg and water together, brush on top pie crust before baking.
