The BEST Baked Strawberry Pie

Warm delicious strawberry pie with a topping of vanilla ice cream.

Ingredients

  • 6 cups strawberries slices
  • 1 cup sugar
  • ¼ cup corn starch
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¼ tsp cinnamon
  • 2 Tbsp lemon juice
  • 1 tablespoon butter
  • 1 egg white
  • 3 tablespoon water

Instructions

  • Wash and hull strawberries. Slice into bite size pieces.
  • Add sugar, corn starch, salt, cinnamon, nutmeg, and lemon juice and stir.
  • Let stand 10 minutes. Meanwhile, prepare pie crust (See link above for recipe).
  • Fill with fruit mixture.
  • Dot with butter.
  • Put pie crust on top. If you dont want to do lattice pie crust be sure to add a few slits to allow to vent.
  • lightly beat egg white and water together, brush on top pie crust before baking.
  • Bake at 400 for 35-40 minutes.

Notes

If adding rhubarb sub 2 cups of the strawberries for rhubarb. Cut rhubarb into ½ inch pieces and toss with strawberries.
