The Best Pickled Red Onions and Vegetables

Ingredients

  • ½ lime fresh
  • 2 cups vinegar
  • ½ jalapeño sliced thin
  • 1 garlic clove chopped
  • 2 small-medium red onions sliced thin
  • 1 tablespoon salt
  • 1 teaspoon mixed peppercorns
  • 2 tablespoons sugar

Instructions

  • Using a madolin slice your onions thin and uniform. Divide into two 16 oz jars.
  • Divide the jalapenos, peppercorns, garlic and lime juice and place into jars.
  • Fill the jar with vinegar until the onions are covered.
  • Transfer to an air tight container and store in refrigerator up to two weeks
