Rainbow S'mores Dip Recipe

Ooey, gooey, melted chocolate and peanut butter cups smothered in toasted colorful marshmallows.  This Rainbow S'mores Dip Recipe is perfect for bringing outdoor s'mores inside. Made in minutes, this dip is perfect served with graham crackers, Oreos, or chocolate chip cookies.

Ingredients

  • 16 ounces semi-sweet chocolate chips
  • 10-12 mini peanut butter cups
  • 10 ounces colored mini marshmallows
  • graham crackers for dipping

Instructions

  • Separate colored marshmallows into groups.
  • Spray a 10 inch skillet or braiser with non-stick spray. Add chocolate chips to skillet and spread until even. Sprinkle mini peanut butter cups evenly on top of chocolate chips.
  • Add mini marshmallows on top of chocolate, place each color together in a stripe - forming a rainbow with the different colors.
  • Bake at 350 degrees for 3-4 minutes. Switch baking function to broil and cook for 1 minutes.  This will brown fast, so keep and eye on it.

What if I don't want to separate my marshmallows by color?
It is not necessary to separate them, it is purely for presentation.  You can leave them combined, or you can use white.  They all taste amazing!
What is a s'more?
S'more is a contraction of the phrase "some more". S'mores appeared in a cookbook in the early 1920s, where it was called a "Graham Cracker Sandwich". This recipe was later called a "s'more" in another cookbook of the same recipe.
What should I cook s'mores dip in?
I like to use a 10 inch skillet or braiser.  The only requirement is that the baking dish is oven safe.  So cast iron works great! You can also use a casserole dish.
