Ingredients

  • 2 lbs whole carrots
  • 2 tablespoons honey
  • 2 tablespoons Butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • parsely for garnish optional
  • 1 garlic cloves minced
  • 1 teaspoon chili powder can use cinnamon if you prefer a different spice.

Oven Instructions

  • Preheat oven to 425. Peel and cut carrots as desired. Toss carrots in all the ingredients.
  • Place glazed carrots on a parchment lined baking sheet. Roast for 20 to 25 minutes. Tossing occasionally. For extra caramelization broil at the end for a couple of minutes.
  • Serve immediately.

Pressure Cooker Instructions

  • Peel and cut carrots as desired.
  • Combine all ingredients in pressure cooker.
  • Close lid, and set valve to seal. Cook on high for 4 minutes.
  • Use a quick release when cooking is complete.
  • Use a slotted spoon to transfer to platter. Serve immediately.

  • Be sure to cut the carrots uniformly so that they cook evenly.
  • If you decide to broil the carrots at the end of cooking, it’s important to watch them closely so they don’t burn.
  • You can make this dish up to 3 days in advance and keep it stored in an airtight container in the refrigerator. Reheat in a 350°F oven or in a skillet until warmed through.
