These Air Fryer Red Potatoes are fast, easy, and delicious. Baby potatoes tossed in olive oil, parmesan, garlic, and herbs and then air fried to perfection. This will be your new go-to side for the holidays, or even a weeknight dinner.

- 3 LB small red potatoes
- ½ cup olive oil
- 1 cup fresh grated parmesan cheese
- 6 cloves garlic minced
- 1 tablespoon salt
- 1 teaspoon Italian seasoning
- ¼ cup fresh parsley
Par-boil potatoes in 4 quarts of boiling water for 3 minutes. Drain.
In a large bowl combine olive oil, parmesan, garlic, salt, Italian seasoning, and parsley. Stir to combine.
Toss potatoes in olive oil mixture to coat.
Transfer to an air fryer basket that has been sprayed with non-stick spray.
Preheat the air fryer to 400 degrees and cook potatoes for 10 minutes. Flip potatoes and return to air fryer for an additional 15 minutes.
Serve with additional parsley and salt to taste.
Do I need to par-boil my potatoes?
While I think it yields a better result, you do not have to. You can simply air fry your potatoes until they are fork tender - just increase the cooking time by about 5 minutes.
How long do air fryer red potatoes last?
These will keep in an airtight container in the fridge for up to 5 days. Reheat in the microwave. I do not recommend freezing.
