Three Cheese and Spinach Stuffed Shells

Ingredients

  • 1 box of large pasta shells
  • 15 ounces Ricotta cheese
  • ½ cup parmesan cheese
  • 1 ½ cups Mozzarella cheese divided
  • 2 eggs
  • ½ cup spinach
  • 10 large basil leaves
  • 1 teaspoon salt
  • few twists of the pepper grinder
  • 1 lb ground turkey or beef optional
  • 1 28 ounces jar of marinara sauce

Instructions

  • Boil pasta shells according to directions, set aside.
  • If using a meat sauce, cook and prepare meat combine with marinara sauce. set aside.
  • in a mixing bowl lightly beat eggs, then add ricotta, parmesan cheese, ½ cup mozzarella cheese.
  • Chop spinach and basil, add to cheese with salt and pepper.
  • mix well.
  • Place about 1 Tablespoon filling into shells. When pan is full, top with sauce, remaining mozzarella cheese. Cover with foil and bake at 350 for 20-30 minutes.
